Strawberry Pretzel Squares

I wanted to make this dessert after having it at my sister's 4th of July cookout, but didn't have the recipe so found it on Allrecipes. I made this yesterday for a BBQ we hosted at our house and while it was okay, it wasn't as good as the version I had before. The cream layer was not very thick and the jello/strawberry layer seemed watered down and not as flavorful. A friend at our BBQ said she makes it but uses 2 8 oz. cream cheese and an 8 oz. container of whipped topping when she makes it; and uses frozen (thawed) sliced strawberries and their juice, so I am going to try it that way next time.

MMMMM... Brownies

These are SOOOO good! I prefer fudgy brownies over cake-like ones, so these are right up my alley. I've made them twice now, doubling the recipe and baking them in a 9x13 pan. This recipe is so much easier than my usual homemade brownie recipe, but tastes just as good, if not better. I think my oven was running hotter than the set temperature the first time I made them, and the brownies puffed up all around the edges but stayed sunken in the center. They still tasted great, but the next time I used an oven thermometer and adjusted the oven temp so it read correctly and the result was much better.

Mike's Favorite Grilled Cheese

I have never really considered how to make a grilled cheese sandwich a "recipe", but I guess that I just assumed that eevryone knew how to make one! I didn't know that there was any other way to make grilled cheese. I have making them like this my whole life, learning from watching my mother. For those that mentioned the sandwich getting too brown before the cheese is melted - just turn the heat down to about medium low- the cheese will be nice and gooey and the outside toasted just right.

Rempel Family Meatloaf

My family loved this meatloaf! I doubled the recipe and made it into two loaves. I don't use a loaf pan to bake meatloaf in - I just form it into a loaf shape and bake it in a 9 x 13 baking dish. I used the tip to place bread slices under the meatloaf before baking, and it worked great! The meatloaf wasn't at all greasy, as many other people said. I think the key is to follow exactly what the recipe says and use LEAN ground beef.

Chicken Enchiladas I

I was really looking forward to serving this to my family, as it sounded very good and had so many good ratings and comments. I was disappointed at the outcome, though. I scaled the recipe to 10 servings, but other than that I followed the recipe exactly. Maybe it was just the brand of taco sauce that I used, I don't know. Out of a family of 6, no one took seconds, which is rare since I have 4 sons who are either teenagers or in their early 20's! I had a lot of leftovers, so I guess there was no need to scale it to 10 this time!

Chicken in a Pot

I changed the scale of this recipe to 6 since I have a larger family and followed it exactly except for adding chopped onions along with the mushrooms. I served it over fettucini, along with a tossed salad and bread. My family liked it, but didn't rave over it or anything. I will make it again, though, and the next time I will pound the chicken thinner before breading it and add more spices. Then I think it would be excellant!

McCormick's Delicious Deviled Eggs

I doubled this recipe, as I was taking them to a Christmas party where there was a larger crowd. The amount of mayo seemed to be too much, so the next time I will cut down on that. You can always add more, but you can't take it out once it's in there! I wondered if the recipe meant salad dressing rather than mayonnaise, because it probably would have been fine if I had used that. I would also reduce the amount of seasoned salt since between that and the mayonnaise, it was a bit too salty - and I like salt! I usually don't have deviled eggs left over, but I did this time, so others must have thought the same.
