Slow Cooker Butter Chicken

This was delicious. A five star if I mixed it with the right vegetables: diced potatoes, cauliflower. my husband might like asparagus and chile peppers. Served with naan.

The Best Thai Coconut Soup

This is a four star because I consider it a great base and very easy to adjust ingredients to what is on hand. Using red curry paste, I more than doubled the paste, but still was a pretty mild dish. Next time, I'll either add some spicier curry paste or perhaps some thai chiles or at the least cayenne pepper to kick it up a notch (or several). Also will probably substitute sliced chicken as shrimp is never a big hit in my house. Cook longer to allow flavors to meld. Try chopped bell pepper too.

Hummus Pizza

This was a really good recipe; a nice change up from some of the more usual tomato-based pizzas. I would also like to try it with spinach and garlic like some others have suggested. The broccoli was very good, but could be overpowering for someone who does not love broccoli. Either way, lots of garlic would always be good in a dish like this IMO. Will definitely make again.

Holiday Cranberry Chutney

Ok, cranberries are not my favorite, but I could drink this recipe...almost. I reduced sugar to a cup (might try using honey next time) and loved the smells of cooking this dish. 5 star for ease, holiday presenation, smell, and taste!

Uncooked Banana Pudding

I substituted plain yogurt for the sour cream and increased the pudding mix to 2 (3.5 oz.) boxes since that's what I had on hand. Turned out great, especially after soaking for the night. The flavors seemed to meld together more.

Peppered Shrimp Alfredo

I'm rating this a four because it makes enough to freeze and is easy and NO MEAT! Basic tomato sauce, cheese and pasta but Richie doesn't complain so that's enough for me :)

Peach Burritos

This may be a 3 but since it's so hard to find fruit dishes to incorporate into side dishes, I'll give it a four. Use fresh, but can will work for peaches. Puree to fill the burrito better. Richie gobbled it up too, which surprised me!

This was a good quick recipe. Excellent as a leftover, even better perhaps as the flavors meld. Substituted golden mushroom instead of cream of mushroom.

Turkey Divan

This was a very good dish, rated between a 3 and 4 stars. Richie liked it too, especially with the lovely white wine flavoring. He picked out quite a few of the broccoli in the bottom but I could make the dish without the poultry and just add broccoli and be happy--the sauce is that good. Use whole wheat flour and chicken instead of turkey. Served over rice. Exceptional leftover!!!
