Penne with Chicken and Asparagus

This was really good! I also added the mushrooms, and doubled the broth. Had only Asiago cheese, but it was great!

Yummy! Brought to a church meeting and was well received. My slow cooker is a poor cooker, so I cooked it for 10 hours on low, and added the pasta (had to substitute Ditalini, but it was good!) at the end.

Cinnamon Pork Loin and Potatoes

Yummy! I used only sweet potatoes and used a little less than the 2 Tbl of cinnamon. Good meal for adults and children. Thanks!

Zesty Chicken and Potatoes

The potatoes had nice flavor, but the chicken was kind of bland. Perhaps marinating for some time before putting in the oven would fix that. I cut the potatoes into bite sized pieces, also. Too much liquid left in the pan after - very soupy - I need to find a use for it, as I didn't want to throw it out!

Shrimp Scampi Bake

This is SO Yummy! I couldn't wait till lunch time for my leftovers! I cut the butter to 1/2 cup and added some olive oil instead. I also added about 1/3 cup white wine. I served this over linguine, with a salad on the side. Fantastic!

Fiery Pork Skewers

I did not add the red pepper flakes, as I wanted my two children to eat dinner (!). It was wonderful anyway! I also marinated the cubes for the day in the fridge. Served with jasmine rice and a veggie.

Famous Chicken Francaise

Yummy!! I used chicken tenders, which I put in a ziploc bag with the flour mixture, then coated in the egg mixture and panfried. When golden, I kept them warm in the oven and made the sauce in the same frying pan. My children loved the chicken as it was (no extra sauce). My husband and I had the chicken and sauce over linguine. Very tender and tasty. Fabulous!

Marinated Flank Steak

We used this marinade for a London Broil (on sale cheap!!), marinated for 24 hours, grilled and sliced thin. Very tasty!

Grandma's Banana Bread

This is great! I needed a recipe that would use both bananas and buttermilk, and this one was perfect. I, too, cut the sugar down to 2 1/2 cups. I baked it in the 9x13 pan as instructed, but it took 80 minutes (after 60 minutes I covered it loosely with foil) to cook through in the center.

Eggplant Parmesan II

This was my first time ever preparing eggplant, and we loved this recipe. My 9 year old claims it's one of the best dinners I've ever made. I did not tell her it was eggplant until she asked me what it was the next day! I sweated the eggplant slices for about an hour and rinsed well with cold water, and it worked great. Served with spaghetti and extra romano cheese. Very good dinner.

Excellent sauce! Followed recipe as written, except I did not wait till the sauce reduced so much, because I wanted to serve it on top of egg noodles, too. It was great!

Chicken Cordon Bleu II

We loved this dish. I followed the advise of others - wrapped chicken bundles with silicone bands, used panko crumbs, sauteed the chicken first, then baked in oven. Made the sauce in the same pan using 1/2 and 1/2. Yummy!

Glazed Meatloaf II

This recipe is called "The Best Meatloaf Yet" in our house. I have been asked by my DH not to try any more meatloaf recipes! The sauce on top is great for kid, too.
