Garden Fresh Tomato Soup

I live in japan for 2 years and while I'm not a big canned soup person, my wife would always beg me to buy some cans from the import store when we would pass. $2 for a can of soup is a hard pill to swallow. I came across this recipe and with the local farmer nearby having tomatoes nearly year round, I had a great alternative. It's easy to make and was a fantastic way to use cheap tomatoes. This is a great recipe for 2 people, but if you had more you would need to double it. I personally like mine with basil, my wife likes sour cream and a piece of grilled cheese :)

Tacos in Pasta Shells

Great basic recipe. I use turkey and neufchatel cheese in addition to omiting the butter and using a little taco sauce on the bottom to reduce some of the calories. Also, I used a low-sodium taco seasoning pack in place of the spices. The original recipes is great, but these modifications mean I can eat it a little more often ^_~

Incredibly Cheesy Turkey Meatloaf

This is exactly like my father-in-law's meatloaf recipe, but with turkey. I opted to drop the milk in favor of 1/2c apple sauce the second time I made it, and was delicious.

Cumin Turkey Burgers

A great base recipes that can be modified to your personal tastes. I left out the spicy peppers and opted for 1/2 a red pepper (wife is pregnant and not a fan of anything remotely spicy right now >_

Gnocchi and Peppers in Balsamic Sauce

Wasn't amazing, but a decent tasting recipe. I chose to leave out the butter and replace it with some chicken stock. Some added smoked sausage made it a complete meal.

Honey Roasted Red Potatoes

Really fantastic, went great with a peppercorn turkey breast I made. I tossed the potatoes and onion with the vinaigrette, then spread them on the pan. That made for a better coating. Some of the honey will burn, but it's easy to clean up if you use a silicone baking mat or some parchment paper.

Brooke's Best Bombshell Brownies

Pretty good, I used caramel bits instead of chocolate chips. The brownie itself tasted just a touch grainy, but I'll take that over gooey. Probably going to be my go-to brownie recipe.

Emma's Belgian Waffles

Fantastic waffles, light and airy plus slightly crispy. Perfect all by themselves or with a touch of real maple syrup. I also did not wait the full amount of time and added baking powder as I did not have self rising flour.

Marshmallow Popcorn Balls

Nice basic recipe. I used 16c of prepopped lightly salted popcorn and added some vanilla for extra flavor. Make sure to butter your hands a few times, they get a little sticky even with butter!
