Pasta with Sweet Peas

We followed many of the steps taken by other reviewers. Instead of using water, we used chicken stock – & doubled all amounts to use as a main course vs. side dish. We also used frozen baby peas (I added them a couple of minutes before serving), This is one of the few times we used butter – & it made a huge difference in the taste outcome. As others have said, the red pepper flakes really compliment this dish - as does a good shave (or 2) of fresh parmesan cheese over the top. Quick, easy & tasty!

Macaroni Pie

I’ve been cooking (& reviewing recipes) for a number of years. I say that only because I’ve never given a recipe this low of a mark. We each ate 2 spoonfuls & threw the remainder away. I added lots of extra pepper, garlic/onion powder & even several shakes of LA Gold (hot sauce). This was bland & the overall texture wasn’t good. I’ll stick with Kraft.

Hot Onion Dip

Easily modified this recipe to be a little lower in fat. The best part – it didn’t effect the taste AT ALL. We used low-fat cream cheese & reduced fat mayo. We also sauteed the onions (in cooking spray) prior to baking. Huge hit!

Szechwan Shrimp

We added well drained frozen vegetables & doubled the sauce as others suggested. (We used ½ the microwave time on the frozen vegetables to insure they wouldn’t be over-cooked.) The sauce is excellent w/ chicken. We served over Japanese noodles. Very easy w/ great spice & flavor!!!

Tomato Barley Soup

As others have written, this is a decent base recipe. We added additional vegetables & herbs (basil & fresh parsley) along w/ straight chicken stock (no water). It’s okay but most likely won’t make again.

Quick Szechwan Sauce

We used ½ olive & ½ sesame oil to give this more of an Asian taste. We also made the substitution of 2T garlic chili sauce instead of the red chili peppers (but still added the amount of garlic called for in the recipe ingredients) . As other reviews suggested, we cut the sugar by ½ - & used brown (sugar) instead of white. Easy recipe to make & the sauce turned out well.

Syrian Bread

These were a hit! Having a baking stone made things much easier than fidgeting w/ baking pans. The pizza stone preheated (on 500 degrees) as the dough was being made. We flipped the bread over after about 2 minutes to brown on the opposite side. Any longer & the bread would become crispy instead of chewy. Froze beautifully. Rave reviews – can’t wait to make them again.

Crusty Potato Bread

The bread recipe is written for a 2 or 2.5-pound bread. I’m never certain which setting to use on my bread machine. We added 1c of cheddar cheese & 1 T. of garlic powder & Italian seasoning – though all were for personal preference. The overall bread is quite good – even better as toast the following morning. Will make again.

Mock Chicken Fried Steak

Other than omitting salt, we followed the ingredients as written. We stuck the “chicken” patties in the freezer for approx. 15 min. instead of using the refrigerator for 30. This is a very quick, easy & tasty recipe.

Sauteed Apples

Take our advice – make this recipe as written. Change nothing! You won’t be sorry. We skipped the waffles & went directly to topping vanilla ice cream (while the apples were still warm). Outstanding!!!

Honey Of An Oatmeal Bread

This is the 1st bread machine recipes which made dense bread. We used all purpose unbleached flour (not bread flour). We made no other changes. Easy w/ a great taste & texture.

Mom's Ginger Snaps

This was my 1st attempt at ginger snaps. They were a huge hit. Per the suggestion of other reviews, I also doubled all spices (great idea). I used a 1 inch melon scoop & the cookies were the perfect size. I got approx. 40 cookies from the single recipe. Delicious!

Baked Garlic Green Beans

An easy & different way to use frozen green beans! We replaced the butter w/ olive oil & used rice vinegar instead of cider vinegar. I probably used closer to 2 cups of green beans, as well. Good!

Unbelievable Fish Batter

We used a total of 2 T baking powder which worked very well – w/o the bitter aftertaste previous reviewers have written about. We also added ¼ tsp. Old Bay & an equal amount of LA Gold (hot sauce). 5 +++ stars from us. We’ll be making this recipe again!!!

Mediterranean Fish Stew

Wow! What a terrific recipe. We used 1T dried parsley & 1 ½ T Italian seasoning (in place of fresh herbs). We also used vegetable stock instead of water (which was a huge flavor boost). The cinnamon was the surprise ingredient (we only used ½ tsp. – which I’ll stick with – any more & it would be overpowering). We didn’t add the fish until 5 minutes before serving. 5 +++

Brooke's Best Bombshell Brownies

For those of you that aren’t dark chocolate lovers – this recipe isn’t for you. 3 cups of sugar IS a lot. We decreased (slightly) to 1 ¼ c white & 1 ¼ brown. Good recipe.

Salmon Loaf

This recipe was average tasting. Salmon patties are far better. We did add onion/garlic powder & a dash or 2 of LA Gold (hot sauce) but still thought the overall recipe tasted bland. Won’t make this 1 again.

Pasta with Asparagus

The base recipe is a good start but needed the help of extra flavors & seasoning. We sautéed 1 whole onion w/ 3 chopped garlic cloves before adding the asparagus. We also added at least ¼ tsp. ground pepper & an additional amount of red pepper flakes (total – ¾ tsp.). Other reviewers are correct. Fresh Parm. is key. Another good, quick week-night meal.

Sweet Garlic Tomato Beef Pasta

We used petite diced tomatoes & left them as is. We omitted the salt, used extra minced garlic (3 cloves – total) & veg. stock instead of bullion cubes. We added close to 1T Italian seasoning, about 6 oz. fresh mushrooms (personal preference) & a couple shakes of LA Gold (hot sauce). This is a great week-night “quick fix” dinner.
