I just made this chicken with a few changes. First, I marinated the chicken for 10-15 minutes with a few spices (italian seasoning, basil, cayenne pepper, salt, pepper, meat tenderizing powder, garlic powder). Then, I dipped the chicken in egg and then in panko (with garlic powder, parmesan, pepper and salt added). I then put the chicken on a baking tray and spread pesto over the top. Then I grated the mozzarella and put it on top. It was EXCELLENT and i really think that the panko made a HUUUUGE difference.
