African Chicken Stew

Reviewed: Oct. 17, 2010
Great flavor! Husband raved! I didnt have garbonzo beans, substituted a can of fire-roasted tomatoes with garlic. I increased the heat a little as suggested by others with a pinch of cayenne and a bit more pepper flakes. Only had storebrand peanut butter, very chunky, and it was great! try this recipe!!

Chicken Fajita Melts

OMG delicious!! excellent, must try recipe! it was so good! i just realized in re-reading the recipe that i didn't measure the taco seasoning, just used the whole package. i used jarred red peppers added after the onion cooked in place of the fresh one i didn't have. flavor was great all around! hubby loved it. will definitely make this again! so easy and flavorful!

Rave Reviews Coconut Cake

Reviewed: Dec. 16, 2009
rating is for the frosting - i haven't made the cake. i use this frosting on the Coconut Cake IV from this site, and it is an incredible combination! makes enough frosting for 2 layer cake.

Wonderful recipe! thank you!! i followed as is, but used smoked paprika to add to the bbq flavor. i skimmed off a bunch of the fat floating on top before thickening with cornstarch. YUMMM!! Love that it cooks while i'm at work. Hubby loved it. KEEPER!!!

my niece helped with the baking this year, so she handled this one on her own. it was easy, turned out perfectly! no worries about overbaking, and the texture was great. thanks for a sure-fire winner!

Beignets

Reviewed: Nov. 29, 2009
wonderful, light and yummy! i used butter, and they were very good. i used my 'fry-baby', and they cooked up in just minutes. my batch made waaaaay more than i thought it would, so i have followed another reviewers suggestion and made up some cinnamon rolls. they are rising in the fridge to bake off in the morning. thanks for an excellent recipe! UPDATE: the cinnamon rolls were unbelievable! so delicious, yeasty, moist, the best i have ever had. made the beignets again for a large group, and they all raved--especially the ones who had eaten the ones at cafe du monde. thanks so much for this recipe, i am making the dough now for a batch of cinnamon buns!

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 27, 2009
made it for thanksgiving yesterday and it went in a flash, everyone loved it. i added 1/2 of the water from the whole corn as suggested by others because i wanted it soft. It was, and it was delicious. I also added a little diced sweet red pepper (from a jar) just for color. a definite keeper recipe and it is now being sent to all my sisters to add to their collections. cook time was accurate for me. thanks for this easy, awesome recipe!!

Delicious!! i added chopped sundried tomatoes as suggested, and basil in place of dill (was out of dill). Also took the easy road as suggested and cut a slit in the breast and stuffed it. Super easy, super delish. Husband raved. success!! This is a keeper.

Southern Dirty Rice

Reviewed: Oct. 30, 2009
Wonderful, authentic recipe. Served to our minister who is from Baton Rouge... he thought it was like his Mom's. Omitted the gizzards, and it was just fine. None of the northerners knew what the meat bits were, and were shocked that they liked it when we told them :-). I will definitely use this recipe again!

Cajun Chicken

Reviewed: Oct. 30, 2009
This is a good recipe, very tasty and turned out moist. I did it under the broiler, and needed less than 20 minutes for sure...just need to watch them so they don't overcook. Nice flavor! I used the the cajun seasoning recipe from this site...saved myself a trip to the store, and a several dollars! Thanks!!

Corn Tortilla Quiche

Reviewed: Oct. 3, 2009
Fantastic recipe! i only made small changes that others recommended (1/2 cup sour cream for the cottage cheese, added a little cumin to the egg mix). So delicious! My husband raved!! No problems at all cutting it, the tortillas soaked up some of the liquid during cooking and it was a snap to get out of the pan. Had a little left over (i don't know how!) but just polished it off for lunch. I will be making this again and again!!

Sensational recipe! Made it with a little more half'n'half as advised by other reviewers. Mixed some plain bread crumbs (panko) with the cheese on top. WOW! Can I say that I am now famous for "my" mac'n'cheese?? Thank you!!!!

Cranberry Chutney I

Reviewed: Nov. 28, 2008
Delicious combination of flavors! I didn't have fresh berries, so was looking for a recipe that used canned whole berry "sauce". I decided to try it with this one, and it worked beautifully. i used one can in place of water, sugar and berries. kept the rest the same. cooks up faster (since the berries are done) and tasted fantastic. everyone loved it! thanks!

Asian Coleslaw

Reviewed: May 26, 2008
OMG! I don't care how my guests feel about this (they haven't even arrived yet) -- I could sit down right now and eat the whole bowl! Hubby feels the same! Used just regular cabbage (all I had) and no red peppers (out of them), but STILL it is just delicious!! This is the best dressing I have had on an asian salad. Thank you soooooo much! I am taking this recipe to kids' retreat this summer - I am sure going to be the star!
