Beth's Spicy Oatmeal Raisin Cookies

You can't go wrong with cinnamon and cloves! These are incredible! The smell alone that fills the house as they bake is advertisement enough on how great these cookies are! The only thing different I did was to use cold butter (makes the cookies fluffier according to Alton Brown) and leave out the raisins (hubby's request).

Pork in Olive Oil Marinade

This was really god, but I'm not sure we would have liked it as much if we hadn't gone with the idea of serving it with pita bread and tzatziki sauce. It was a nice change though.

Sue's Taco Salad

This was delicious! We didn't use tomatoes (hubby doesn't like them) and used ground turkey, but I would go with ground beef next time for fuller flavor. We also added some fresh avocado, and that went great with it. This is incredibly, easy, budget friendly, and incredibly tasty! The ranch dressing is a great addition to the taco seasoning!

Pesto Chicken Florentine

Great recipe-incredibly easy and quick for the great taste you get in the end! My husband's only recommendation(and he always has one) was to possibly consider marinating the chicken before hand, which I agree would really add to the dish (possible in an italian-seasoning based marinade); otherwise, this was a great change with great ingredients!

Tuscan Soup

It was neat to see how it all comes together and is very similar to the Olive Garden Soup. I had to play with the spices quite a bit though to get them to be recognizeable at all when I tasted it. I did add red pepper flakes and that helped a bit. The potatoes were bland and could use some of their own personal attention before being added to the pot, BUT, even with all that said, it was a good soup and I will be making it again, just with a different approach. Hot, crusty bread goes great with it as well!

Egg-Free Low-Fat Oatmeal Cookies

I'd give 3.5 stars if it were possible. They are definitely different consistency-wise, but are a great alternative for a treat rather than no-good-goodies! Next time, I would up the cinnamon a bit. The raisins add sweetness, but I like to taste the spice a bit more. They are good cookies, but not for you if you want something that tastes like what you are used to!
