My Best Clam Chowder

Yummy! This recipe was fantastic even before I added the clams & vinegar. I am trying to lose weight so used fat free half-and-half, which didn't hurt this recipe at all.

Miss Betty's Super Quick Dinner Rolls

This is the craziest recipe ever. My husband, kids and our/their friends LOVE these things. They seem a little bland to me, but since my family wants to give them 5 stars, I'll go along. Add garlic, cheddar cheese or berries to transform these miracle muffins.

Delicious Ham and Potato Soup

This is wonderful and easy to make. I didn't have ham so substituted bacon. I took leftovers to a friend who called me today to say this was the best potato soup ever. I'm sending her the recipe.

Creamy Au Gratin Potatoes

Chicken Enchiladas with Creamy Green Chile Sauce

YUMMY STUFF! Easy to make and even my husband, who doesn't usually like Mexican food, loved it. As I was rolling the enchiladas he was taking the chicken chunks and dipping them in the sauce. My kids asked for it twice this week.

Chicken Pot Pie VIII

This is so so good. I make individual pot pies. I don't use a bottom crust and I use pre-made pie crust on the top, or I make mashed potatoes and use that instead of crust. I use a large mug to cut the crust to the right size. This is a favorite of friends and family.

Buttery Corn Bread

I served this as dessert with honey and everyone loved it. They said it was better than the packaged mix. Reduce the flour down to 2 cups.

The Real Mojito

I took advice of others here and made the syrup from 1 part sugar 1 part water but threw about 10 mint leaves and half a lime into the pot and let it simmer for about 20 minutes. I now have a fantastic mojito syrup. I made enough to can a batch for future use. My Cuban husband loves to serve Cuban food to our guests and now I can make the mood complete with mojitos.

Simple, Classic Chicken Potpie

FANTASTIC! I made this for family/friends last night and got GREAT reviews. One friend who is a known pot pie lover proclaimed this to be the best pot pie he has ever had. I didn't have frozen veggies so used fresh green beans, onion, carrots & celery. I served with salad & fresh dinner rolls. Easy to make, easy to eat and makes great leftovers.

Beef Stroganoff II

Chicken Cordon Bleu II

I served this wonderful recipe last night for a small dinner party. Everybody loved it!!! I read some of the reviews before I made this and took some advice. I breaded my chicken instead of floured and I used 1/2 butter & 1/2 olive oil for browning. I then baked the chicken for 30 minutes. Ask for thin sliced ham & cheese at the deli counter and pound chicken breasts a little thinner for a roll that won't require picks or string. YUMMY! I will serve this again & again.
