Spicy African Yam Soup

after tinkering with this recipe, i ended up with more of a stew than a soup (although the recipe as submitted is pretty darn good!). i prefer a fuller stew. i added almost a full cup of crunchy peanut butter (for a nicely added crunch and to make it creamier), substituted the cumin for curry. I also added a minced jalapeno pepper along with a full jar of hot chunky salsa. i omitted the rice and added chopped chicken. I had some red peppers, so i chopped them up and threw them in. yum! even my daughter, who is not a big veggie lover, really enjoys this recipe! thank you!!

Spaghetti Pork Chops

really good. i added garlic as suggested, and more onion. the meat was tender, not tough at all. i didn't have italian seasoning, so i used pizza seasoning. my picky 12 year old daughter really liked it, so it's a keeper!

Chocolate Pumpkin Cake

wow, good recipe, easy too. i usually don't like cake but this turned out so moist, so tasty. i added pumpkin pie spice as suggested, great touch. i used a cream cheese frosting from this site, and added mini chocolate chips to the top of the cake after frosted. it got a thumbs up from my 12 year old daughter. it's a keeper! thanks!

okay, not bad. i guess i was expecting something better because it was reviewed so highly. not as sweet as i would have liked. next time i would top with a cream cheese frosting, skip the nuts. thanks!

i used chopped romaine lettuce out of the bag, one white/one red onion, and didn't have parsley. i've never been a big fan of sumac, so i cut back on that a bit. i cut up two pitas with a pizza cutter to make squares, drizzled them with olive oil, popped them in the oven for ten minutes, and added them after i had topped my veggies with the dressing to avoid the sogginess. my daughter and i both enjoyed this recipe, thanks!

Banana Banana Bread

this was an awesome recipe. very dense and moist, and that's how a good banana bread should be. i only had 4 medium bananas, so i used about 1/2 c. of cinnamon applesauce in addition to the bananas. i added walnuts and shredded coconut to the top before baking. i baked my bread for about 45 minutes on the top rack, put some tin foil on top of it, then put it on the bottom rack for about 30 minutes more. came out perfectly!! thanks!

Sweet Potato Rolls

well, i was somewhat disappointed with how my rolls came out after reading everyone's reviews. mine turned out heavy and a little dry. the dough was sooooooo sticky, very frustrating! in total, i probably used about 4 1/2 c. of flour. i was expecting "flaky, light" rolls like everyone else. oh well, you win some, you lose some! but i'm not gonna try this one again.

Broccoli Casserole

here's what i did: i used 10 oz frozen spinach, 16 oz frozen cauliflower, small can mushrooms (it's what i had on hand). i took the advice here and did not add any salt. I used garlic from the jar and some garlic powder. about 2 c. Cheese. Every one said the original recipe called for too much mayo, so i altered that by using 1/2 c. mayo mixed with 1/2 c. yogurt. I used crushed goldfish crackers. I added the chopped onion without sautaying it. Here's what i think of what i did: Definitely good advice to cut the salt. Don't used canned mushrooms. The cauliflower is okay, the spinach is good. Definitely go with the broccoli. Adding the onions without frying in butter is good. The mayo/yogurt works very well! Cheese is good amount. I could have added more goldfish crackers, don't skimp on those; about ½ a bag is good. Mine came out not soggy, fairly firm, with alot of veggies, which is what i like. Not bad! Next time i will definitely use broccoli.

these are awesome drop cookies, and they are not meant to be cookie-cutter cookies. these are sooooooo good. cannot overstate how good these are. be prepared to want to eat the whole darn batch, they are that good, no kidding. i gained 5 lbs. because of these cookies.

Baked Cornish Game Hens

Awesome recipe. My daughter loved it. My modifications: I cut up more veggies, so they spilled out of the cavity. I basted it every 15 or 20 minutes. It came out so tender. Not dry at all. Delicious. And this was my first time ever making cornish hens! Thanks a million for this recipes!!!!
