Quinoa and Black Beans

Fabulous recipe! So yummy warm, and then the leftovers are good right from the fridge. I added about 2 tbsp of fresh lime juice to mine and it made it even better! Thanks for the great recipe.

Tarragon Tartar Sauce

I made this tartar sauce minus the capers (I didn't have them on hand and forgot to pick them up at the store) and served it with boiled halibut. My dinner party loved the tartar sauce! Even a non-tartar-sauce person loved it! It had a nice tangy and slightly sweet taste, from the lemon and bread and butter pickles, and I think the tarragon just rounds it out so nicely. It made the dinner, I think! I made the recipe as 22 servings, but it served my party of 8 with maybe 2 servings left. Like I said, they loved it. If I ever have the capers I'll have to try it that way, too. Thank you for the tasty sauce recipe!

Green Bean and Portobello Mushroom Casserole

YUM - it goes really well with the traditional Thanksgiving meal. I made the recipe for Thanksgiving and it disappeared so fast that I had to make a second double batch so we could have more leftovers! Everyone liked the crunchy texture that the almonds gave. I substituted frozen cut green beans and used regular cream of mushroom soup adding a little extra chopped garlic. The second time I didn't have baby portabello mushrooms so I used button mushrooms; it wasn't as good with the button mushrooms. Next time I'll try french cut green beans (probably frozen) and definitely use baby portabellos/crimini mushrooms.
