Chicken Stroganoff I

Reviewed: Sep. 19, 2012
Browning sauce is used for making gravy. It is used in many European dishes, especially in Scotland, Ireland, troughtout the UK. Try looking for Kitchen Boquet brand or Gravy Master brand. I bought some from ebay not too long ago. Amazon has it too, I'm sure.

OREO® Triple Layer Chocolate Pie

Reviewed: Dec. 30, 2011
This gets extra points in my book for being so fast and easy to make. I cheated by using a ready-made chocolate pie crust. Besides, I only had 4 Oreo cookies so wasn't able to make the crust even if I had wanted to. It still turned out great. How can you go wrong with chocolate and cool whip?

Gourmet Sweet Potato Classic

Reviewed: Dec. 30, 2011
My family all gets together for Thanksgiving each year and all the ladies bring a dish or two for the feast. (Yes, it is a feast since there are so many of us.) My husband calls it the dinner of many casseroles. I bring the sweet potatoes each year, and have always used a different sweet potato recipe in the past. Not any more!! Everyone raved about the sweet potatoes this year and said they were the best they had ever eaten. Even the teenagers liked them. I am now known as the sweet potato queen. Thanks for sharing this yummy dish which thereby hightened my status to royalty. I will surely be beheaded if I ever deviate from this recipe.

Angela's Awesome Enchiladas

Reviewed: Jan. 7, 2012
These were great! I made only a couple of minor changes. First of all, I have two small shildren so I used five 6" flour tortillas rather than the 12" ones so that they would be smaller. I cut the recipe in half and used a square casserole dish rather than the 9 x 13 dish and they fit perfectly. Just line four of them up side by side at the top of the dish and lay the other one at the bottom going the other direction. The only thing I did differently was to drain my green chilies into the soup mixture and I omitted the black olives because I didn't have any on hand but will add them next time I make these. My hubby said these were even better than the ones at the Mexican restaurant we frequently go to. I served them with Spanish rice, Ranch beans and some fresh Pico de Gallo (also from this website) and, of course, chips and dip. This was my first attempt at enchiladas and I was very surprised at how easy it was. I will be making these again and again. Thanks for sharing!

Brown Sugar Meatloaf

Reviewed: Jan. 31, 2012
Great meatloaf. I've make it several times. Even the kids eat it up. The only thing I do differently is that I mix the brown sugar and ketchup together and put it on the top, rather than on the bottom. I've done it both ways and I prefer it on the top. I also add a little extra ginger, being careful not to use too much since a little goes a long way. Another 1/8 t is plenty. Make sure to use ground beef that is low in fat. I use 90% lean. This eliminates the need to drain off the excess fat. I also make extra topping to put on the table. The hubby likes to dip his in extra sauce. Great recipe. Thanks for sharing.

Last night after supper, my husband said, "You need to make these again sometime.". That sounded like a compliment to me so this recipe gets 5 stars!

Sweet Potato Pecan Pie by EAGLE BRAND®

Reviewed: Sep. 5, 2012
I only used about 3/4 t orange zest, as others said 1 t was too much. It was the perfect amount in my opinion, as I like the zest. I followed the rest of the recipe exactly. After licking some of the batter off my fingers, I could hardly help from eating the whole thing before putting it into the oven. Two of my siblings told me I HAD to bring this to Thanksgiving this year. I will need to make two though because it went fast. Great fall recipe!

Chicken Fiesta Salad

Reviewed: Apr. 25, 2013
Excellent! I just added some fresh cilantro, shredded cheddar cheese, and some tortilla strips. (I like Sante Fe style and you can find those in the crouton isle at the grocery store.) A little taco seasoning in ranch dressing tops it off just beautifully. I love how you blended the beans with the corn and salsa over the stove. Thanks for the recipe and I am craving it again already!

Baked Teriyaki Chicken

Reviewed: Jun. 26, 2013
Delicious! I used boneless, skinless breasts because that's what I had on hand. I served it with veggie stir fry, white rice, and an Asian salad with yummy 'Japanese Ginger Salad Dressing', also from this site. What a fantastic meal! Thanks for sharing!

Stir Fried Sesame Vegetables with Rice

Reviewed: Jun. 26, 2013
Delicious! I used green peppers, broccoli, carrots, onion, canned mushrooms, and celery, just because that is what I had on hand. I also substituted ground ginger since I didn't have any fresh, and used corn oil since I had no peanut oil. I love the double sesame finish! I used toasted sesame seeds so that eliminated the need to bake them myself. Served over rice alongside 'Baked Teriyaki Chicken', also from this site and with an Asian salad with 'Japanese Ginger Salad Dressing', also from this site. What a fantastic meal! Thanks for sharing!

Chef John's Macaroni and Cheese

I followed the recipe exactly. Delicious! I love the panko crust. This is a mac and cheese for grown-ups. (But the kids liked it too.) Thanks for sharing, Chef John.

White Cheddar Macaroni with Bacon and Thyme

Reviewed: Oct. 16, 2013
Delicious! I topped with some panko crumbs mixed with melted butter (a little trick I learned from "Chef John's Mac & Cheese" from this website). I also used more Parmesan cheese on the bottom. I made a Parmesan basket with coursly grated Parmigiano Reggiano, a little trick I learned on a Princess cruise last week.

Chicken Enchilada Slow Cooker Soup

Reviewed: Feb. 19, 2014
I made this dish "as is" except I left off the salt and added extra cilantro. (I love that stuff!) Yummy! The hubby and the kiddos (ages 7 and 5) liked it too. I served it with sour cream, shredded cheddar cheese and some of those little Southwest (Santa Fe) Style tortilla strips that you find in the crouton isle. It's a keeper!

Spiced Cranberry Apple Chutney

Reviewed: Dec. 26, 2011
For Christmas, I put this on top of my baked brie appetizer with a little shaved cocoanut sprinkled on top to give it a festive snowflake flair. My family raved about it, and said it was delicious. Of course I had plenty left over to serve as a side dish. There was none left at the end of the meal. Thanks for sharing.

Candied Carrots

Reviewed: Nov. 21, 2011
Yummy + easy = my kind of recipe. I added just a dash of nutmeg. I also used regular carrots instead of baby carrots because, to me, they have more flavor. I kept mine on the stovetop until the sauce was slightly thickened. Hubby and kids loved them. Thanks for sharing.

Yellow Squash Casserole

Reviewed: Nov. 3, 2011
Yummy goodness. The only thing I did different was to melt the 2 T butter and stir it into the topping, rather than dot it on the top. I must have put more than half of the topping in the mixture because there wasn't enough so cover the whole top of the casserole so I just added a little more crackers and cheese (and butter) for the top. This is better than my usual recipe, the one I got from my mother-in-law. Shhhh! Don't tell her I said that.

Baked Pork Chops I

Reviewed: Oct. 27, 2011
I've made this several times and it is consistent, comes out great every time. I think I use a little more garlic powder and seasoned salt than is called for, although I don't actually measure. I sprinkle each piece individually with the shaker, applying a full coat to each piece. The specified length in the oven is for thick chops. If you have thin chops you will need to decrease the cooking time. My husband and I both love these, and the kids do too. Thanks for sharing!
