Green Enchilada Pork Chili

A wonderful mix of flavors. I added a can of black beans (undrained) which helped thicken it up a bit and served it in a bowl with a scoop of white rice in the middle. A side salad completes the meal. (For the salad dressing, try mixing some taco seasoning into ranch dressing, a nice compliment, in my opinion.)

Chocolate Chess Pie II

I was skeptical about making this after reading some of the reviews saying that it did not set up right. I did not have a problem with that. I followed the recipe exactly and mine set just fine. Delicious! Perhaps it depends on the elevation where you are. I know that certain things need more time to bake/ cook at higher elevations. I served mine with vanilla ice cream and a little chocolate syrup and toasted pecans on top. Cinnamon is good sprinkled on top also. Reminds me of one my mom used to make and we called it Hot Fudge Pie. Thanks for sharing!

Chicken Enchilada Slow Cooker Soup

I made this dish "as is" except I left off the salt and added extra cilantro. (I love that stuff!) Yummy! The hubby and the kiddos (ages 7 and 5) liked it too. I served it with sour cream, shredded cheddar cheese and some of those little Southwest (Santa Fe) Style tortilla strips that you find in the crouton isle. It's a keeper!

White Cheddar Macaroni with Bacon and Thyme

Delicious! I topped with some panko crumbs mixed with melted butter (a little trick I learned from "Chef John's Mac & Cheese" from this website). I also used more Parmesan cheese on the bottom. I made a Parmesan basket with coursly grated Parmigiano Reggiano, a little trick I learned on a Princess cruise last week.

Stir Fried Sesame Vegetables with Rice

Delicious! I used green peppers, broccoli, carrots, onion, canned mushrooms, and celery, just because that is what I had on hand. I also substituted ground ginger since I didn't have any fresh, and used corn oil since I had no peanut oil. I love the double sesame finish! I used toasted sesame seeds so that eliminated the need to bake them myself. Served over rice alongside 'Baked Teriyaki Chicken', also from this site and with an Asian salad with 'Japanese Ginger Salad Dressing', also from this site. What a fantastic meal! Thanks for sharing!

Japanese Ginger Salad Dressing

Delicious! I used half olive oil, half sesame oil (like others recommended), and substituted ground ginger since I didn't have any fresh. I added the ginger last, beginning with about 1/8 t and kept adding until it tasted good. I probably used about 1/2 t altogether. I used to live in Japan. This reminds me of my time there. Thanks for sharing!

Baked Teriyaki Chicken

Delicious! I used boneless, skinless breasts because that's what I had on hand. I served it with veggie stir fry, white rice, and an Asian salad with yummy 'Japanese Ginger Salad Dressing', also from this site. What a fantastic meal! Thanks for sharing!

Chicken Fiesta Salad

Excellent! I just added some fresh cilantro, shredded cheddar cheese, and some tortilla strips. (I like Sante Fe style and you can find those in the crouton isle at the grocery store.) A little taco seasoning in ranch dressing tops it off just beautifully. I love how you blended the beans with the corn and salsa over the stove. Thanks for the recipe and I am craving it again already!

The Ultimate Burger Topping

Delicious! I used a really good Gorgonzola. We blackened our burgers and cooked them over the grill. I have been dipping chips in the leftover topping. Yummy!! I'm about ready to just drinking it straight from the bottle, it is that good. Thanks for sharing!!

Chicken and Tortellini Stew

This is a very light and tasty stew. I made very few modifications. I added 1 stalk celery, 1 clove garlic to the veggies and rounded the onion to a whole cup. I added some Italian seasoning, salt and pepper to the broth and let all that simmer on low, covered for about an hour. (My veggies were still pretty crunchy before I added the broth.) I substituted 2 lbs refrigerated tortellini for the dry. I let the tortellini and corn starch simmer on low until tortellini was done, then added a little whole cream (about 2-3 Tbsp) after it had finished simmering completely, as you never want to boil cream. Delicious. Served with salad and garlic bread sticks. Also a big hit with the kids. The stew was their favorite thing. Bonus points!

Chicken Stroganoff I

Browning sauce is used for making gravy. It is used in many European dishes, especially in Scotland, Ireland, troughtout the UK. Try looking for Kitchen Boquet brand or Gravy Master brand. I bought some from ebay not too long ago. Amazon has it too, I'm sure.

Lick Your Lips Cake

I almost gave this only 4 stars since the recipe was unclear about whether or not to drain the fruit. But after eating the cake, I decided to be more forgiving since it turned out so wonderfully delicious. I used all the juice from the oranges and all of the juice from the pineapple. It was very moist and delicious. This is a very refreshing dessert, great for summertime parties.

Sweet Potato Pecan Pie by EAGLE BRAND®

I only used about 3/4 t orange zest, as others said 1 t was too much. It was the perfect amount in my opinion, as I like the zest. I followed the rest of the recipe exactly. After licking some of the batter off my fingers, I could hardly help from eating the whole thing before putting it into the oven. Two of my siblings told me I HAD to bring this to Thanksgiving this year. I will need to make two though because it went fast. Great fall recipe!

Brown Sugar Meatloaf

Great meatloaf. I've make it several times. Even the kids eat it up. The only thing I do differently is that I mix the brown sugar and ketchup together and put it on the top, rather than on the bottom. I've done it both ways and I prefer it on the top. I also add a little extra ginger, being careful not to use too much since a little goes a long way. Another 1/8 t is plenty. Make sure to use ground beef that is low in fat. I use 90% lean. This eliminates the need to drain off the excess fat. I also make extra topping to put on the table. The hubby likes to dip his in extra sauce. Great recipe. Thanks for sharing.

Angela's Awesome Enchiladas

These were great! I made only a couple of minor changes. First of all, I have two small shildren so I used five 6" flour tortillas rather than the 12" ones so that they would be smaller. I cut the recipe in half and used a square casserole dish rather than the 9 x 13 dish and they fit perfectly. Just line four of them up side by side at the top of the dish and lay the other one at the bottom going the other direction. The only thing I did differently was to drain my green chilies into the soup mixture and I omitted the black olives because I didn't have any on hand but will add them next time I make these. My hubby said these were even better than the ones at the Mexican restaurant we frequently go to. I served them with Spanish rice, Ranch beans and some fresh Pico de Gallo (also from this website) and, of course, chips and dip. This was my first attempt at enchiladas and I was very surprised at how easy it was. I will be making these again and again. Thanks for sharing!
