Catherine's Spicy Chicken Soup

Reviewed: Feb. 6, 2009
This was fantastic! I might add some pasta to it the next time I make it so it will fill us up!

Chicken or Turkey Tetrazzini Deluxe

Reviewed: Dec. 15, 2008
Finally another way to finish off the turkey! My husband and I "inherited" another turkey from his mother and we were getting tired of sandwiches. I changed the peas to broccoli and it still worked out!

Leftover Casserole

Reviewed: Oct. 26, 2008
I tweaked this also. I used two cans of chicken breast and one can of chopped ham for the meats. The can of mixed vegetables I had consisted mostly of carrots, so I added a can of corn and a can of string beans. Instead of cream of mushroom, I used cream of celery. As far as it being bland, I fixed that with crushed red pepper and ground black pepper! And changing the cheese from cheddar to a mix of mozzarella and cheddar/monterey jack mix added even more flavor. We'll be making more adjustments as this becomes one of our new favorites!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 16, 2008
This was great! I used a can of Cream of Celery and a can of Cream of Mushroom. I also used one can of store brand "Grands" (8 in a package). Served it up with a side of mashed potatoes using the soup for "gravy". We're thinking of trying this with boneless pork chops!

Tangy Slow Cooker Pork Roast

Reviewed: Aug. 8, 2006
Very good! We served this with sauerkraut and mashed potatoes (the PA Dutch influence of my hometown). We're now thinking maybe this will work with chicken or beef.

Baked Omelet

Reviewed: Apr. 30, 2006
I got this recipe with my monthly coupons from Acme Markets and decided to give it a try. Very simple to make and easy to add ingredients to it too! I used some leftover ham from Easter and fresh onions and mushrooms and it still fit in the pan! This may become the alternative to skillet omelets for us!

Best London Broil Ever!

Reviewed: Jan. 29, 2006
I made this after I had taken advantage of a "Buy one, get one free" sale on London Broil. This was surprisingly quick and easy! The meat came out absolutely tender and if it had a bone, the meat would have fallen off!
