Gluten-Free Yellow Cake

This was wonderful! Easy to make with staples that I had on hand. Didn't require many different or exotic flours. Several days after baking, the cupcakes (in an airtight container) were still moist and delicious.

Classic Pear Crisp

Loved it! I cooked it in a slow cooker for 2 hours as our oven was full that day. I also substituted gluten-free flour and oats since I'm celiac, and added in extra ginger. Tasty!

Fantastic! And a great time saver during the holidays! Anything that can be made ahead of time is a winner in my book. I use plain nonfat yogurt or fat free sour cream, and lowfat cream cheese to try to make it healthier.

Enchilada Casserole

This is outstanding! It's my new favorite go-to recipe. It's easy to modify to your family's taste. I've also made it recently for several friends who have had new babies. I cook it for 30 minutes covered, and give it to them cold with the instructions to uncover and cook for 15 minutes or until heated. It's been a big hit!

Irish Brown Soda Bread

Outstanding! We scaled down the recipe to 3 servings so that we always can make it fresh. It's not good for leftovers - but it makes a great hockey puck! For a quick accompaniment to dinner, I measure out the dry ingredients and put them in storage containers. Then when I come home from work, all I have to do is add buttermilk and pop it in the oven.
