I halved the recipe and used butter-flavored Crisco instead of butter. Although I refrigerated the dough overnight, it was still sticky and needed a well-floured surface to roll. The cookie was very soft and somewhat floury-tasting. It probably would be fine with a bit of frosting.

Slow Cooker Taco Soup

A great dinner idea that every one of my picky eaters loved! I used canned tomatoes that already had chile peppers, so I didn't add any extra. I also used 2 packages of taco seasoning and cut the water in half. Sour cream, cheese and chips are a must. Terribly fatting, but terribly good!

Easy Holiday Cutout Cookies

After struggling with many "homemade" sugar cookie recipes, I finally broke down and bought this store mix. Not only was this cookie great tasting, the dough was a dream to work with - even without refrigerating it first! I did have to increase the cooking time a couple of extra minutes because I used larger (3") cookie cutters. I'm throwing out my other sugar cookie recipies and sticking with this one from now on!

Cheese Ball I

I accidentally bought a package of ranch dip instead of ranch dressing. I don't know if this made a difference, but my cheese ball was extremely salty. I tried adding another 1/2 cup of cheddar cheese to cut some of the salt taste, but that didn't work. I just couldn't serve it.

Thanksgiving Cheese Ball

This cheese ball is wonderful. I did double the cheddar cheese and used a few pimento-stuffed olives out of a jar instead of the can called for in the recipe. I also had to refrigerate the mixture before it would roll into a ball. Other than those changes, everything was perfect!

Turkey Brine

A great brine. I doubled the recipe for a 22 lb. turkey and used 1 gal. apple juice and 1 gal. vegetable broth instead of all broth. I also used ground spices instead of dried. I put the turkey in a clean plastic trash bag, then placed it in a large cooler. Next, I poured the brine in the bag and tied it closed. I placed a gallon of frozen water in the cooler next to the bag to keep the whole thing cool while it marinated overnight. Watch out for the cooking time on this one as a brined bird cooks much faster - especially if you're using a roasting bag (which I did). My 22 lber cooked in only 2 1/2 hours!!

Lemon Garlic Tilapia

Cooking Light magazine's Chicken Parmesan

GREAT recipe! The only variation I made was to add extra parmesan cheese (approx. 1/4 cup) to the breadcrumbs before dredging the chicken. I also used 1 T. olive oil and 1 T. butter instead of all butter to fry the chicken. My frying time was closer to 5-6 minutes each side. The chicken couldn't have been more tender or better tasting. Amazingly delicious for such a simple dish!

Baked Beans III

I used a can of baked beans that was already flavored with brown sugar and bacon. I was hoping that this recipe would somehow enhance the flavor enough to entice my bean-adverse children. Unfortunately, neither I nor my children found it worth the effort. Tasted like the same old baked beans to us. Maybe you have to be a baked bean lover to really appreciate this recipe.

Chantal's New York Cheesecake

I prefer a creamy, dense cheesecake and wanted to see if this recipe was better without the flour and milk. So I made two cheesecakes - one with those ingredients and one without. Both came out great and were equally delicious. However, the one without the flour and milk was a bit too creamy even for me. The texture of the one with the flour and milk was perfect.

New Waldorf Salad

Raspberry Ribbons

The funniest thing happened with these cookies. I tasted them warm out of the oven and didn't think they were very good. However, the next day when they had thoroughly cooled, they were AWESOME!! Everyone at my Christmas party raved about them. They're going to be a holiday standard in my house. Made them a few days in advance, and they kept very well in a plastic container. Also, I put the glaze in a quart-sized food storage bag then snipped the corner off and piped the glaze over top of the cookies. They looked as pretty as the picture.
