Chef John's Make-Ahead Turkey Gravy

Believe or not no turkey wings at the store so I used a pkg of chicken wing and then proceded. NICE smooth flavorful gravy

Blackened Chicken

I really like this seasoning mix. I cooked the chicken different by taking a small breast and pounding it out some, heating a small skillet on high for a minute then adding EVVO and 2 T butter and as soon as it got hot and bubbly added the chicken and put the lid on it on almost high heat after about 1 minute you could see the breast turning white, I turned off the heat flipped the chicken put the lid back on on and cooked on the other side for 1-2 minutes then it was done. I eat low carb and this is very good, I took the pan juices and added 1/2 tsp jarred crushed garlic stirred around for a few seconds then drizzled over some prepared spinach. MMM I am making a large jar of the to keep on hand.

Crustless Cranberry Pie

I love this!! It's excellent!! I did make several of the suggested changes. I agree this is more like a coffeecake, the dough is similar to a cookie in thickness. I added 1/2 t of cinnamon and the struesel topping that was suggested. I reduced the cranberrys from 2 to 1 1/2 cups, and rised them in warm water to bring them to room temp prior to mixing in. And I measured a little generously on the sugar to appeal to a wider audience. I made an extra half recipe and made it in a springform pan, I probably could have fit a double batch in it. Took a little longer than stated to get done, was less than firm when I took it out but it set up nicely. It tasted like a thick cranberry walnut cookie bar. I thought it was the best dessert there. Everyone at work loved it and asked for the recipe!!

Winter Squash Rolls

These are excellent!!! They stand out of the crowd!!! Delicious rolls. I used acorn sqaush and my "squash hating, vegetable hating, don't ever try anything new" husband loved them!! No one believed thats where they got their lovely yellow color. They ate all of these and barely touched the white dinner rolls I made. They thought they tasted gourmet like what you would get at a restaraunt!!! I will definately make these again!!!

Unbelievable Rolls

These are very good plain white rolls, tender and somewhat light, but not stand out of the crowd good. Nice recipe for plain rolls. I might try with honey next time.

My Amish Friend's Caramel Corn

This is very yummy and easy. This uses margarine insted of butter so its more affordable. Much better than store bought!!! I set the oven at 200, and checked and stirred the popcorn every 10 minutes to help it not burn. I sized the recipe to 44 servings for the caramel and used that for the popcorn popped from 1 cup of kernels. This is a great recipe for gifts. My family wants me to make more for them, right now!!!!

Cappuccino in a Jar

This is very good, tastes like Cappuccino from the gas station. Not like brewed cappucino but very good and tasty like the canned varietys you buy for much more$$$ Quick, inexpensive and make a nice gift in a Mug. Try it :)

Hot Chocolate Mix II

This is a very Yummy hot chocolate!! Added a box chocolate pudding mix per half batch and used rounded measurements on the NesQuick and creamer. Very delicious and easy to make! I think I will try with vanilla or hazelnut creamer next time for a twist on a classic. Thanks for this recipe!
