Carolyn's Sweet Potato Fries

Good spice suggestions Carolyn! To the folks looking for crispier fries you can soak the cut sweet potatoes in a salt water bath then pat dry. This will draw out much of the water. Also pre heat the baking sheet. With that being said, I prefer plumper softer sweet potato fries. Good job Carolyn!

Sugar Cookie Cutouts

so, tried to make this with 3 kids ages 3 and under...wound up putting the dry and cream before the eggs and this my be why it turned out very dry. Many fell apart on the cookie sheet. I also found that putting sugar on before baking runs the risk of it being more sticky. Taste is decent. I also need to say that this is the first time I've made sugar cookies so perhaps chalk much of this up to inexperience.

Colleen's Slow Cooker Jambalaya

Pretty good! I did see that it was soupy as many other reviewers had observed. I added about 2 tsps of filé and that thickened it a bit and added that distinctive New Orleans essence. I also added the shrimp raw, shelled with the tails removed so they would be tender. Spiciness was nicely subtle and develops as you eat. I don't think heat should ever smack you in the face, more sneak up from behind and surprise you. Definitely have some hot sauce available for those who like more heat, though, as this is more 'warm' than 'hot'. This worked well over brown rice.

Eggplant Parmesan II

Awesome! I hate giving my family fried food so this offered a great alternative that i believe tastes better than fried. In fact, my wife who never liked eggplant actually enjoys this. I too salted and rinsed the 'plant before baking and that worked quite well. None of the infamous bitterness was detected. Thanks for this great recipe, its a keeper for me!!!
