Broccoli Salad with Margarita Dressing

I made this the other night to serve with grilled cajun chicken. I didn't use the mushrooms just because I don't like raw mushrooms. The salad was fantastic - thanks for the new summer recipe.

Garlic and White Wine Chicken Scaloppine

I can say that I found these new McCormick seasoning packets in the grocery store last weekend and made the Chicken Scaloppine during the week. Very impressive for a prepared seasoning packet!!! Everyone loved it. I made it with brown rice instead of orzo, but I imagine it would be delicious either way.

Cindy's Awesome Clam Chowder

Chicken Scampi II

I made this last night and my husband loved it. I cut the chiken breasts into strips and dredged in flour, then followed the rest of the recipe exact. I added a little more lemon and garlic than called for and also poured in some white wine to make a little more saucy because I was serving over linguini. Yum Yum!

Flounder Mediterranean

I made this last night. I was going to use flounder, but when I got to the store the cod looked better. Like others, I used a can of diced tomatoes drained, and I baked the cod for about 10 minutes in some white wine, salt & pepper. Then I topped with the sauce and baked for another 15-20 minutes. We all enjoyed this, it was very healthy and light. I tossed some green leaf lettuce, grape tomatoes, and red onion with a little olive oil, fresh lemon juice and feta for a side. Great Mediterranean evening!

Clone of a Cinnabon

Baked Pesto Chicken

I love this dish! Except, instead of using tomatoes, I cut a slit on the top of each chicken breast and stuff with julienned sundried tomatoes. It's yum-skilly!

Sweet Corn Bread

Apple Pie by Grandma Ople

I made this pie for Thanksgiving and everyone loved it!! I also added a little vanilla, cinnamon and nutmeg and poured the liquid directly over the apple mixture. I made the lattice top and then brushed with some egg. The pie came out beautifully - picture perfect!!
