Brandied Shrimp with Pasta

I want to like this recipe but I just can't. It was missing something so I was left unsatisfied after I ate it. My husband seemed to like it. I had to remove the shrimp after they were cooked because I didn't want them to get tough. I added the cooked shrimp back into the skillet after the wine and butter were added. Used 1/2 box noodles and 1/3 cup butter but kept everything else the same.

Chicken Jambalaya

This is a very good recipe when you want something warm and filling and are tired of the same old standbys. My husband loves this dish. I use an entire can of tomatoes (15 oz). I have to add about 1/8 cup more of rice because of the extra liquid from the tomatoes. It's a very forgiving recipe...I like that.

Black Bean and Couscous Salad

I've found my new favorite summer salad. Yum!!! Tasted amazing warm but didn't disappoint after sitting in the fridge for 2 hours. Did as others suggested and doubled the lime juice, vinegar (used white wine vinegar) and cumin. Also added 1/2 tsp ground coriander, 1/4 tsp dried crushed oregano leaves, 1/2 seeded and chopped jalapeno pepper and 1/8 cup minced red onion (didn't have any green onion). Used one can of black beans (rinsed and drained) and the corn kernels from 3 corn cobs (a little over 1 cup).

Watermelon Summer Salad

Surprising flavor combination but delicious and a very refreshing salad. I thought it had a bit too much fresh mint. I used calamata olives which I like better than black olives. This salad was not good the next day which was surprising to me.

Fabulous Pesto Pasta Salad

Very yummy! I added cooked chicken breast and some pancetta to make it a main meal. I mixed the first 14 ingredients in a food processor so I wouldn't have to chop anything up. I added 1/4 c of the pine nuts into the processor as well. I also used fresh mozzarella as was suggested. So good! I made the mistake of not letting it sit for at least an hour and the flavors were so overpowering. Our taste buds were maxed out for the rest of the evening. The next day the flavors were just right and delicious. Try heating it up in the microwave for 30-45 seconds to soften the cheese slightly. Delicious!!!

Quick Yeast Rolls

I don't know what I did wrong. They turned out very spongy and dense. I didn't add any extra flour like some suggested. After the initial rise it filled up 12 muffin cups instead of 8. When baking, the tops didn't want to brown up and the sides got very dark. Not sure if I'll try this recipe again.

Grandmother's Famous Cranberry Bread

This was so delicious! I made it less than 24 hours ago and it's all gone. I had left over cranberries (whole) from a cranberry sauce that my husband made for Thanksgiving. I cut them in half and also added some chopped up dried apricot because I didn't have any raisins. I used about 3/4 cup of sugar and thought it was plenty sweet since the cranberries I used were already cooked in orange juice and honey.

Lemon and Cilantro Shrimp

I used 1 lemon for zesting and juicing and it had a powerful lemon taste to it. I tossed in some cooked spaghetti noodles with the shrimp. It had too much lemon in it for my husband and I thought it was okay. If I make this again I'll use half the lemon juice.

Bev's Chocolate Pie

This pie was good but very, very sweet. Tasted like fudge. I added all but the yolks and butter to the sauce pan at once. I then mixed in the yolks and then the butter and turned on the stove and cooked it on medium-low until the butter melted. After 40 minutes of cooking it still jiggled so I cooked it another 10 minutes. It came out perfect. Very creamy like pudding. Not at all grainy like other pies that I have had. I plan to make this again but I'll definitely cut back on the sugar.

Cheesy Macaroni and Cheese

I made this for a potluck and doubled the ingredients. I was only able to get a taste of it because it was all gone by the time I got to the dish. Everyone loved it but I thought it could have used a little more salt. Make sure you write down the oven temp because it doesn't appear when you print the recipe.

Spinach and Pasta Shells

This recipe was very easy to make. I used 3/4 bag of fresh spinach instead of the frozen kind and found out that I should have used the whole bag. I added some Italian sausage, tbsp butter, and a few shakes of grated parmesan cheese to it. It looks like it will taste bland but it wasn't bad. My husband liked it and he's a pretty picky eater.
