Spiced Pecan Shortbread

Taiwanese Fried Tofu

My husband and I loved this recipe. It is really tasty I usually serve it with rice and a quick veggie stir fry. I found the black vinegar at a chinese grocery store and, although I thought it was a little expensive to buy just for 1 dish, I find myself adding a splash here and there to lots of other asian dishes. Well worth the money for the depth of flavour it adds.

Apple Crisp II

Amazing! This is a lazy weekend favourite of ours. I makes a great breakfast treat or a nice after dinner dessert. I really love the topping and so I tend to double up to make sure there is plenty to go around.

Pumpkin Wheat Honey Muffins

Great recipe! I wouldn't go so far as to call it healthy, given the amount of sugar and oil but it sure is a tasty way to bake with wholewheat flour. The muffins rose really well and, unlike my previous experiences with w/w flour in baking, the texture of them is really light and fluffy. The only change I made was to use butternut squash (pumpkins can be hard to come by in England and canned pumpkin is only available in expensive stores specialising in American ingredients)- I boiled it and used a whole cup of the well drained puree. My husband was overly keen on the honey taste but I think that has more to do with the kind of honey I used - it has quite a strong taste. Next time, I will look out for a milder variety to use in baking. I will definitely be making these again! Thanks for the recipe.

Chicken Makhani (Indian Butter Chicken)

I really enjoyed this dish! Following from other reviews, I made a couple of changes. I used fresh garlic and ginger and substituted cumin and coriander for the garam masala (didn't have any) and added a handful of cashew nuts, ground up, as a thickener instead of cornflour. As a vegetarian, I used chick peas instead of chicken and bulked it up with quartered mushrooms. It turned out creamy and sweet and my husband and I both loved it. Although easy to make, I would be happy to serve this the next time I have company over for dinner.

Mama Bear's Porridge

I just made this for my breakfast and it is amazing. I loved it. I scaled the recipe back to 1 serving; but still used a full egg. I didn't add the butter at the end but the porridge still turned out creamy and delicious. Next time I may omit the raisins and add a chopped apple to the porridge at the same time as the oats.

Chewy Chocolate Chip Oatmeal Cookies

A great cookie! I made the same changes as previous reviewers (extra 1/4C flour, 1/2t baking soda) and used and extra cup of choco chips instead of the walnuts. I will use this recipe again. Thanks!

Slow Cooker Mediterranean Stew

I had such high hopes for this recipe. i followed it exactly - except I used a tin of tomatoes instead of tomato sauce. Is this where I went wrong? I cut the veg into large diced pieces and cooked for 8 hours but it turned out very mushy and had a strange taste - quite sour. My husband is refusing to eat any more of this, even though I used up half our weekly veggies in it! I'm really not looking forward to taking it to work for lunch tomorrow. Sorry but I will not be making this again.

Oat Bran Muffins

I think this is a really great and easily adaptable recipe. Like previous reviewers, I added cinnamon, vanilla, a couple of tbsp yoghurt. I decreased the sugar to 1/3C. I also added 1C dried cranberries soaked in orange juice. I made 18 muffins and they are great! Moist, tasty and quite filling. I'm looking forward to taking them to work this week. Thanks for the recipe!

Outrageous Chocolate Chip Cookies

This is one of my all time favourite cookie recipes! I followed the recipe exactly but baked the cookies for 8 mins before leaving them to cool on the baking sheet for 5 minutes. Crisp around the edges, chewy in the middle. Perfect!

Argentine Lentil Stew

I made this stew last night and I love it. I kept the basic recipe the same but added a little more carrot, apple, paprika and some chopped celery. I also added a pinch of cayenne pepper and plenty of black pepper. It turned out so well! It's the perfect low fat way to use up veggies. I may try adding more veg next time. Thank you!

Raspberry and Almond Shortbread Thumbprints

I absolutely love this recipe. I've avoided shortbread recipes in the past after a disastrous attempt in my youth! This recipe is easy, delicious and looks great. I substituted vanilla for almond extract and used a white chocolate and cream glaze.

This gets 5* because it's so simple to prepare and delicious. I added mushrooms to the recipe and wrapped the fajitas with some Simple Mexican Rice from this site. A keeper!

This was incredibly simple to make; it took no time at all. I added a little sweetcorn and a dash of chilli pepper but prepared it as per the recipe. I served it with Colourful Vegetable Fajitas from this site.

Beaker's Vegetable Barley Soup

This recipe was fantastic. Easy to prepare and cook; heartily appreciated by my friends during the winter. I made a few small changes the second time I made it. I increased the amount of celery, added a can of kidney beans (in addition to the chickpeas) and slightly decreased the amount of barley. It is a very versatile recipe: definitely a keeper.
