About this Cook
I'm a full time homemaker (domestic goddess), wife, and mother of three teens. I keep busy by volunteering at the kid's schools and various fundraisers throughout the year. My mom never really did much cooking, my most remarkable memories of her cooking is that she poured Ragu all over pork chops one night, chicken the next night for what seemed like forever. Her turkey gravy was gray and chunky with giblets. Not at all appetizing! Fortunately, my mother in law didn't mind teaching me some of her cooking skills, and through trial and error, I've become a somewhat decent cook.

My cooking tragedies
Being a Tupperware freak, I thought it would be a good idea to combine two ingredients in the quick shake container for speed and ease. In full witness of my teenage daughter, I began to shake them together. About two shakes into it, we both realized it wasn't a good idea and the soda caused a massive explosion all over the kitchen. Great bonding experience while the three women of the home cleaned the mess and my dutiful husband continued the movie we were watching, occassionally chuckling at the thought of my brain fart.

Baked Potato Soup I
I made this soup at the request of a young friend who has had their jaw wired shut due to an injury, but I don't think they're going to get much of it, it's too good! I followed all the directions, but omitted the onion at the patient's request and didn't realize the potatoes had to be pre-baked, but it only took an additional few minutes for them to cook. I also used fat free milk and added salt and pepper to taste. It did turn out very thick (probably because of the additional cooking time), but is easily rectified w/additional milk or water. This will be puree'd for the patient, who needs the extra fat and calories while eating only things that will fit through a straw. I'm adding this to my favorite soups! Thanks for the recipe!

Mini Cheesecakes II
Yum! I did make adjustments to satisfy our low carb diet by omitted the wafer and substituting the sugar with Splenda. I made sure the cream cheese was room temperature as others had suggested. I would also recommend removing the cheesecakes from the muffin tin about 10 - 15 minutes after removing them from the oven, once they've set, to prevent excessive condensation which is probably what happened to the reviewer who said the wafers were dripping with water. I cooled mine on a cooling rack. I served them with sugar free fruit preserves. Definitely satisfied our sweet tooth!

Bacon-y Bok Choy
With our efforts toward adding fresh vegetables to our diet, I'm always looking for new recipes. I had a half a head of Chinese cabbage and about 4 ounces of bean sprouts leftover and decided to modify this recipe with those ingredients. The flavor was very good, just the right amount of spice for my taste. Thanks for sharing!
