Homestyle Turkey, the Michigander Way

My 1st ever turkey....and it turned out great. Since it is my 1st bird, I do wonder what difference the broth stock makes...besides leaving me with no actual drippings to work with for gravy.... I'll keep this in my back pocket whilst looking around for others.

Banana Sour Cream Bread

Oh no...yet another banana bread recipe. I really wanted to love this especially because of the sour cream....but it rather disappointing. The only change I made was to halve the recipes. I'm giving it 3 stars only because I may have overworked the batter, which could have affected the texture. Two stars for flavour, of which there was little....and for the hype, of which there was waaaay too much. It was all right. I won't be using this recipe again.

Sausage Casserole

This was the first casserole recipe I've ever tried...it turned out really well. My changes: I made for 6 instead of 12; I used Gouda cheese and bratwurst (both are more local here in Holland than the cheddar and breakfast sausage) and tossed in red bell peppers. I also prepared everything the evening before, including half frying the shredded potatoes and then lining the bottom of the baking dish, and assembled on Christmas morning just before opening presents, so that by the time we were done, breakfast was ready! Served with mushrooms lightly fried in butter and toast. Will definitely make again. Thx.

Baked Teriyaki Chicken

Great teriyaki sauce recipe. I've used in baking salmon and for stir-frying veg, both with great result. I used fresh ginger and lots of it, substituted the cider vinegar with Japanese cooking rice vinegar called "mirin" - more subtle than cider vinegar, I reduced the sugar to taste, and used light soy sauce. Really and super easy and versatile.

Caesar Salad Supreme

Thanks for this recipe. I live in the Netherlands where caesar salad is hard to come by. I used store bought croutons and then served it with "Jenny's grilled chicken breast" (also on allrecipes.com) to make it a "meal". Super simple recipe that could easily be done in single servings. Will definitely make again. P.S. Wish I knew of this recipe (no raw eggs) when I was craving caesar salad during my pregnancy.

Saffron Rice

This turned out great and went well with paneer stuffed peppers (from BBC Food site). As suggested, I used half the amount of butter. I also used basmati rice. I'll definitely make this again.

Milk Tart

This turned out really well - looked good & tasted good. I wanted only 1 tart so I just halved all the measurements, and that worked out fine. The only adjustment I made was to decrease the amount of sugar in the crust by just a bit. I've always like the milk and fresh strawberries combo, so I served this with fresh strawberries. Delicious! Will definitely make it again.

Chickpea Curry

I was always intimidated by Indian cuisine (making it not eating it) because of all the unfamiliar spices, but this recipe is a great one to start with - simple with really good results. I didn't follow the recipe exactly though. I added some cubed potatoes between the onion and spice stage. I doubled all the spices except for the cayenne pepper and cinnamon. I accidentally drained the chickpeas liquid away so I used the equivalent amount of chicken broth, which was a nice addition. Finally, I added fresh tomatoes at the end. We enjoyed it with plain (Greek) yogurt and nan. I will definitely make this again.

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

this was good and definitely a nice change to steaming or boiling. i used fresh green beans - maybe that altered the results...or it may have been the fresh spinach i threw in just cos i had some left over. anyway, it turned out well - but without the WOW that others wrote about.

Pico de Gallo Chicken Quesadillas

this was really good, especially the pico de gallo, which i'll be making on its own for a healthy dipping sauce! i decreased the amount of lime just to get more out of the other flavours.

Creamy Smoked Salmon Pasta

very good, especially for salmon lovers like my BF. instead of smoked salmon, i followed another reviewer and grilled a salmon fillet in the oven for about 20 min. i then flaked the fish and served it on top of the pasta. it was good, but i think smoked salmon would've achieved the taste intended by this recipe. will use smoked salmon next time.

Eggplant Parmesan II

like others i let the eggplant sweat for about 30 - 40min. because i scale down recipes (there are only 2 of us) my quantities are sometimes off. in this case i didn't have enough eggplant slices to make a complete dish, so i combined penne, tomato sauce (from a jar), crushed garlic & seasonings and used that as a layer in the baking dish. i then proceeded to follow the recipe, as written. it turned out great. very filling with plenty of leftovers.

Spinach Pancakes

these were just "OK" - kind of bland (even with a thai chilli sauce for dipping) and not as crispy as i would've liked them to be. i used fresh spinach, which i steamed first before adding to the egg mixture. it's a good base, but it definitely needs to be played around with. will try again when i have leftover spinach.

Fettuccine Alfredo V

OMG, this was fabulous! very close to the olive garden's version...but perhaps a bit better nutritionally. i decreased the amount of butter, as suggested, and added the cheese to taste (didn't use all that the recipe called for). it was a good thing i implemented portion control while cooking because i'm sure i could've had 2nds and leftovers. definitely a keeper, but definitely for special occasions.

great potato recipe! i baked an extra potato so that i'd have extra filling. do watch the amount of milk. mine seemed dry before re-baking it, but once out of the oven the filling was a tiny bit runny. it was still delicious, though.

Puerto Rican Tostones (Fried Plantains)

these were nice (served them as appetizers) especially with the dipping mayo/ketchup/garlic dipping sauce suggested by others. i tried the cold water step with one piece and my skillet went bananas (haha)! skip this step altogether. i couldn't tell the difference between the one i dipped in water and ones i didn't. will definitely make these again - great party food, i reckon.

Creamy Vegetable Chowder

this is the first soup i've made from scratch...and it turned out beautifully - taste, texture and all. great hearty & healthy soup for cold winter evenings. i usually make it hours before serving to give it a chance to thicken more and to let all the flavours blend. great with the easy mayo biscuits (also on allrecipes), and leftovers are a nice treat.

Ginger Veggie Stir-Fry

nice flavour. added more ginger to give it that extra zing, and at BF's request. like others, i skipped the "coating" step and just added the soy sauce mixture when the veggies were almost done. when time permits (and i feel like it) i toss in bite size agedashi tofu (also on allrecipes). great way to get all your favourtie veg & protein.
