Microwave Popcorn

Can't believe this is so easy and it works! I laid the bag down on its side with no problems except for the fact that 1/2 cup kernels is too much for a standard size lunch bag and it overflowed so I had to stop it early. Next time I'll try a little more oil and 1/3 cup kernels. I couldn't taste the olive oil I used. Thanks for an easy winner! Edit: I've made this several times now and have discovered that you don't even need to use the oil at all. I squirt it w/oil spray after it pops and sprinkle w/salt.

Ricotta Cheese Cake

Yum! I made mine with a devil's food cake in a bundt pan and it was delicious, and so easy! With 3 eggs in the cake I just couldn't bring myself to do 3 in the filling, but it was still very eggy with 2. I also cut the sugar to about 1/2 cup, but probably could have used the full 3/4. A great, easy recipe that can easily stand up to tweaking!

Butternut Squash with Onions and Pecans

So delicious! I nuked the squash in the microwave for 10 minutes or so to soften it so it wasn't so hard to peel and chop. I also let the onions caramelize a bit. A real hit! I never know what to do besides mash w/butter and salt (I hate squash/sweet potato recipes with sweet ingredients) and now I have something new! Thanks!

Rice and Raisin Breakfast Pudding

Awesome! This is easy to make, fills you up. It's a great recipe to tweak, as well. I didn't have maple syrup, so I used a combo of molasses and honey which seemed fine. I also added chopped apples and dates to the raisins to add to the fiber and fruit content. I love to take it to work to nuke up for breakfast. Thanks for the recipe!

Mexican Mole Sauce

Excellent! And so easy. I did find that the cocoa added a touch of bitterness that I didn't care for, but I took another's suggestion and added 2T of peanut butter, which helped. Everyone ate it! (!!!) I simmered chicken strips in the sauce and some of us wrapped it in tortillas w/lettuce and some ate it as is. The sauce got very thick; I didn't have any more broth to thin it, but we ate it anyway. Going into the rotation! Thanks.

Clone of a Cinnabon

Awesome. And easy - I put the dough in my bread maker on the dough cycle. The icing is delicious, just be careful how much you put on the roll; I overdid it and how sweet these were! We just scraped a lot of it off and the rolls were yum! Thanks.

My Favorite Sesame Noodles

Delicious!!! Both kids liked it - a rarity! I used linguini, to approximate lo mein noodles. I used crunchy PB, yum! I didn't use the chili paste (didn't have it) so I added some pepper. I felt the sodium content as written was egregious, so I used "lite" soy. I added chicken chunks to make it a meal and served it hot. Reminded me of the chicken Pad Thai from a local restaurant. A huge hit!

Double Frosted Brownies

This is good with some extract added to the buttercream layer - I used coconut pudding mix w/some coconut added, but it'd be great with mint extract or raspberry extract (and maybe a little food coloring!) These are so easy, taste great and look like you worked! Thanks!

Country Banana Bread

YUM!!! What a great idea. I, too, cut the oil to about 1/3 cup and added all the bananas I had on hand that were inedibly old, which was 5. It turned out moist and delicious! I also added chocolate chips to appease the chocoholic in the family and it was great. Now it's Chocolate Chip Banana Cake! Thanks for the recipe!

Cheesy Brat Stew for the Slow Cooker

I don't like bratwurst. But I thought this would be good for a potluck and appeal to many, so I gave it a try. I think it turned out great! I don't like to review recipes that I've tinkered with, but I don't think what I did changed it appreciably, except for the cheese. I used turkey smoked sausage, fresh, chopped onions and a whole container of sliced mushrooms. I forgot to add the cheese, but I thought it was great without! Using the turkey sausage it probably could use more seasoning, but I'm not one for using a lot of seasoning, so I liked it fine! Thanks.

Gooey Butter Cake I

Awesome! I made almost exactly as written, except for a bit of milk in the cake layer to make it spread in the pan more easily and baked for approx 42 minutes. I also put some pecan halves on top, but did it too early in the baking process as they were swallowed up as the cake puffed! Oh, well, still tasted delicious. I will make again, maybe try the chocolate version!

Whole Wheat Ginger Snaps

Let me say up front: I am not a good cookie baker. I'm always afraid they will be underbaked and so I consistently overbake them. However, I made these exactly as written (save for the cloves, which I don't care for) baked them for the full 15 minutes and they are absolutely PERFECT!!! Yay me! I wish I'd had coarse sugar, as that would have shown up better after baking, but they still have the perfect cracks and taste great! I love this recipe and thank you for posting it!

Six Can Chicken Tortilla Soup

Great idea! My version is slightly "doctored up" but didn't change things appreciably. I didn't have the tomatoes w/chilis, so I subbed in tomato salsa. Worked fine! Also I took others' suggestions and added a can of cream of chicken soup. I ladled the soup over brown rice - yum!!! Thanks for a great recipe that can be altered with the same tasty results!

Easy Broccoli Quiche

Mine turned out perfectly. I stuck more or less to the recipe except for a little less onion and salt. I added some spicy mustard because I thought mozzarella, eggs and broccoli would be fairly bland. I couldn't taste the mustard at all but maybe it sharpened up the taste of the cheese. I just nuked frozen broccoli florets, roughly chopped and put them in the bottom of the crust (I didn't saute them w/the onion) w/the cheese over and poured the egg mixture over all. I mooshed it all around a bit w/a fork to be sure the eggs contacted all the solid bits. Perfect! Not at all wet and plenty tasty.

Chocolate Cookie Mix in a Jar

Holy moley , those are the bomb! Used the "in the jar" part of the recipe for my teacher gifts this year and decided to make up a test batch (since I hadn't made the hubs and chocolate cookies this year - his fave) and they are delicious. Haven't tried them cooled yet - may not get a chance! They look nice in the jar, too. Thanks.

World's Best Scones! From Scotland to the Savoy to the U.S.

Delicious! Didn't have sour cream, but I did have plain greek yogurt, which seems to have worked fine. Patted the dough into a circle and scored into 8 wedges. Baked almost 20 minutes. Wonderful plain!

Too Much Chocolate Cake

Delicious, moist....did I say delicious? I took others' suggestions and cut the oil to 3/4 cup and subbed plain greek yogurt for the sour cream and only used 1 cup of chips, which were plenty! Thanks for the recipe!

Melt - In - Your - Mouth Shortbread

Oh, dear me, these are amazing! They are not as dense as traditional shortbread without the cornstarch but they do literally melt in your mouth. Those who said they were tasteless or dry apparently don't have an appreciation for good shortbread. It's a delicate cookie with delicate flavor. If you don't have the palate for subtle flavors these will taste bland. Too bad for you! Beat the butter 5 min, scooped w/1" cookie scoop, baked ~14 minutes. Easy, delicious.

Poppy Seed Bundt Cake III

Delicious and so moist, with all those eggs and oil. Makes it pretty fatty, but you can't beat the results! I stuck exactly to the recipe and it went fast! I think I'll try other pudding flavors next time.
