I'm a stay at home homeschooling mom to four (and one on the way) children. I have a husband that I could brag on more than the space I have here. I love God and love seeing his wonderful work in the world. Serving Him and and the people He has put in my life are my two great passions!

Anything that tastes great, doesn't take a whole lot of time (like I have much to spare) and is wholesome.
My favorite family cooking traditions
My mom didn't like to cook much so I'm learning as an adult. I don't remember many cooking traditions. Does rice crispy treats every christmas morning count? :)

100% Whole Wheat Pancakes
This is my recipe. Haven't made it for a while but just did this morning going for a vegan version. I used a tablespoon of ground flax for each egg and soy milk for the milk. They turned out so great I think I like this version better! Also, some have commented on the thickness of the batter and it is thick, even more so if you use actual buttermilk. I usually use a mixture of milk and vinegar. Add one tblsp of vinegar for each cup of milk you plan to use to your measuring cup and fill the rest of the way with milk to curdle.

Homemade Garlic Basil Mayonnaise
This looks fabulous but I add a bit of a blend for my oil when making mayo. The kids and hubby say it tastes closest to store bought mayo (if that's what you're used to). I use a cup of avocado oil (it's got a very neutral flavor), a quarter cup of sesame oil and a quarter cup of light olive oil. Also if you have a Vitamix, this is super simple to make and I always use the whole egg which doesn't leave any to waste.

Best Ever Banana Bread
I use this recipe all the time. It's my go-to banana bread but I must say one thing. I NEVER use as much sugar as it calls for. I just doubled the batch tonight and used about 3/4 cup of sugar total! It really doesn't need as much sugar as it calls for unless you're looking for dessert. I do it with less all the time and my kids eat it up. Yum!
