Apple, Beet and Avocado Salad

You know what I think? You only live once, so why not use a whole darn avocado. I also used 2 green onions instead of a regular onion. And it was delicious. Lots of flavour and colour.

I was skeptical about this recipe due to the inclusion of ramen noodles, but I am now a believer in this crunchy and delicious food. The only change I made was replacing 1/4 of the oil in the dressing with sesame oil, just to add some more flavour. I liked how putting the hot toasted noodle/seed/nut mixture on the bok choy while it was still hot wilted the greens a little. Mmm.

Gingery Carrot Salad

I didn't really find this to be much more than the sum of its parts. However, I ended up throwing it into a stir-fry with some tofu and other vegetables, and it tasted good in there... Maybe it would be better with another vegetable added in... possibly cucumber?

Ashley's Chocolate Chip Cookies

I made these last night, and they were delicious. I added some cocoa, and used mint chocolate chips... mmm. Highly recommended. The dough was very stiff and dry when I was mixing it all together; I actually had to knead it with my hands, but I resisted the temptation to add more liquid and they came out great.

Roasted Tomato Salsa I

This is delicious! It took a little longer than 10 minutes in my sketchy old oven, but it was wonderful served up with rice and beans on a summer night.
