White Texas Sheet Cake

Took this to a potluck and it was a huge hit! I cut the sugar to 1 1/2 cups in the cake and 4 cups of confectioners' sugar after reading the reviews. The almond extract is the key here it is delicious so I added 1/2 tsp more. I will make this again for sure.

Sweet Corn Bread

I have made this several times and followed recipe exact...YUMMY! Well, last night had planned to make with dinner when I found I had no sour cream. I decided to puree some cottage cheese. I just added the milk plus 2 Tbls and put in blender. The batter was slightly thinker. It was fantastic, creamier then original and soooo moist! This recipe was already great, but now even better.

Italian Easter Bread (Anise Flavored)

This bread was wonderful. I used my stand mixer with dough hook for kneeding. I wanted for Easter morning, but didn't want to get up early. I made night before and put in fridge to raise overnight and worked beautifully. Put it on round pizza stone after kneeding, covered with plastic wrap sprayed with a little cooking spray so dough wouldn't stick...at 7 AM it was perfect to bake, just left out for 10 mins to bring to room temp and baked. This could be changed in so many ways with different extracts and/or shapes. Yummy!!

Cinnamon Pumpkin Waffles

These were so good! I also did not have wheat germ so just added more flour. I used a white wheat flour mixture. **tip** You can freeze the rest of the can of pumpkin in an ice cube tray. Once frozen pop them out and put in freezer bag. Each frozen cube in 1/4 cup. I put pumpkin in everything, burgers, meatloaf, soups, it is very healthy and my picky kid doesn't even notice. My family loved these! I had two remaining and froze them, but we ate the next morning. Making them again this Saturday!!

Roasted New Potatoes

These are wonderful!! After following the recipe I have changed it up by using all different spices and potatoes. I have also made these on the grill in a foil pack while grilling the rest of my meal. Put in tin foil pack and place on top rack, cook for about 20 minutes.

Homemade Banana Pudding Pie

This was wonderful and I would give a 5 star with a few changes. I changed the servings to 12 and made in a 6 quart casserole. I cup the sugar to 1/4 of the recipe, but it still needed less. My husband is not a sugar person and he could not eat a full serving because is was toooooo sweet. Also, cook your custard until thick because it will not thicken after off the heat. Great recipe and yummy.

Chocolate Chip Snack Cake

This was super yummy. Got to the pantry and realized I only had white cake mix, so I went with it and was great! Also used applesauce instead of oil and egg beaters instead of eggs for health reasons.....was great thankyou for sharing!

Broiled Tilapia Parmesan

This was fantastic! I used salmon and had to broil 4 mins on each side. I sprinkled salt, garlic powder, and sweet basil on salmon before broiling. Mixed together butter, mayo, cheese, and added 5 crushed up ritz crackers to mixture. Spread mixture over broiled salmon and put back under broiler for another minute. This was great.

Winter Energy Cookies

YUMMY!!!! I used only butter...didn't want to go to healthy on first try! I did put all the flours, wheat germ, oatmeal, in blender to make smooth to fool my kids. They ate these up. I also used white/wheat flour for the all purpose and omitted raisins. I will be making these again.

Creamy Macaroni and Cheese

I am a bit mixed on this recipe. My husband and I liked it, the kids hated it. The parmesan flavor was rather strong probably why the kids did not enjoy. There was too much liquid in this one with the 24 oz of milk and cup on broth because I had enough sauce for two pounds of pasta. I would cut that down if I try again this would also bring out more of the cheddar. It was very cream as the name says, but not much flavor.

Broccoli Casserole III

I had to change the "fake" cheese to real cheddar, my reason for 4 stars. I used 4 oz shredded cheddar layed with a 14 oz bag of florets. I crushed the crackers (Ritz) and sprinkled over the casserole, melted the butter and poured over top. Very very good!!! The real cheese was not dry at all!

Peanut Butter Quesadillas

Love this for not only the kids, but myself. I have tried many combinations. My favorite is PB and marshmallows, the mini kind, they just melt and make a sinful treat. After frying in the pan let cool for a minute or two or all the filling will flow out every where. I never use butter or cooking spray just a non-stick pan. YUMMY!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was a great recipe. I cut the sugar to 1/2 cup and used half dark choc., half semi-sweet chips. I have one very picky eater and I have become very good at "sneaking" things into recipes that he won't touch.

Stuffed Baked Sweet Potatoes with Pecans

I love this recipe. I bake 3 or 4 potatoes and then just eyeball the pineapple and pecans. I also add a couple tsp brown sugar and chopped dried fruit such as mango and papaya. I do not scoop back into shells, but just serve in nice dish. I save the leftovers which are just as yummy.
