Spooky Halloween Eyeballs

I just made these for an office Halloween party - words of advice. The peanut butter mixture is REALLY soft - be generous with the powdered sugar. Refrigerate overnight; I refrigerated for between 4-5 hours and had a sticky mess. When making the balls, use more powdered sugar to keep the stickyness down. I melted the almond bark on the stove (after killing two batches in the microwave - stirred every 30 seconds and still burnt it). Let the melted mess cool a little - otherwise you will start to melt the peanut butter mixture. I got tired of dipping and just spooned the mixture over the peanut butter mix, we actually liked how chocolate 'spread out' at the bottom making them look gooey. Making the iris and the food coloring on the toothpick was the easiest part of these and everyone LOVED them. I have to make another batch for a kids party this weekend.

Cranberry, Sausage and Apple Stuffing

I made this for Thanksgiving and we think we'd like this better with some modifications. I was skeptical about using sausage and was right, next time I'm leaving that out. We keep picking it out of the leftovers! We're not big rosemary fans, so I substituted some basil, oregano, and a little pumpkin pie spice - the flavorings were right on. I'd also use 1/4 to 1/2 less cranberries because they make it really sweet. I will be making this again for Christmas though.

Maple Roast Turkey and Gravy

I know I'm out of sync with everyone else but I think I'll go back to my tried and true turkey recipe for Christmas. This was OK but not what we were expecting. It was jucy and sweet, but neither my husband or myself really enjoyed a "sweet" gravy on our mashed potatoes.
