Streusel Topped Blueberry Muffins

I thought the streusel would be a crunchy crumble but it turned out more like a sugar coating & I think that's what made the pool of butter between the foil liner & the pan.

Dirt Cake I

Excellent. Recipe made 24 servings, approx 5 oz each. Used sugar-free chocolate pudding, gummy worms & clear cups. Will prob use smaller cups next time, as children did not eat whole serving.

White Almond Wedding Cake

Pound cake texture. Taste was good. Needed much longer baking time. Very difficult to release from pan. Will try greased parchment paper on bottom if I do it again.

Fresh Herb Dinner Rolls

Increased herb amount to 1/2 cup chives (amount in grocery store package) & 3/4 cup parsley. Did not use egg white wash because I forgot but without it the rolls have a nice rustic appearance. Dough was very WET & STICKY, but turned out well.

Easiest, Most Delicious Meringue Buttercream

More detailed directions. Whisk egg whites, then add sugar & stir thoroughly. Place in double boiler (metal bowl didn't work so I put a smaller saucepan into a bigger one). Stir constantly until temp reaches 160 degrees. Pour into mixing bowl. Whip to soft peak stage. Allow bowl to COOL! Add chunks of butter (1/2 - 1 tablespoon sized pieces). Mix until texture is smooth. No soup. Great taste. This will become your go-to frosting. The recipe amount made plenty for a 9 inch 2 layer cake. I saved the rest & am eating it a teaspoon at a time. It's that yummy!

Garlic Carrots

Easy. My carrots took a while to cook, so the water kept evaporating, & I kept adding more, 1/4 cup at a time. Will definitely make again!

Lemon Muffins

I added 1.5 tbsp fresh lemon zest & 1/2 tsp lemon extract & still thought they were more like faintly lemon biscuits. The family was happy though. Next time I am cutting the baking powder to 2.5 tsp & increasing the amount of lemon flavor.

Beautiful color. I think I will try more potatoes & fewer leeks next round. The only flavor that was coming through was onion. I dumped in sour cream afterwards to smoothe out the taste.

Pudding-Topped Fruit Salad

Excellent. Lovely & yummy. Will definitely make again, except I'll leave out the grapes as their skins interupted the smoothness of the other fruit. I used canned peaches & added canned pears & mandarin oranges. I cut everything small.
