Amazing. Scraped the white pith off the rind to avoid bitterness. Made into muffins. Lots of compliments. Will reduce sugar to 1 cup next time.

Pumpkin Muffins with Streusel Topping

I used all pumpkin instead of any oil and doubled the streusel. I also used a cream cheese filling (8 ounces softened cream cheese, 1 cup sifted powdered sugar, 1/2 teaspoon vanilla). This made 24 muffins. If you use the cream cheese filling, you will need to bake for 35 minutes. It's hard to tell when they're finished and you want to err on the overbaked side because if you don't, then the muffins will "crater" when you take them out. I'd probably make the spices stronger next time.

Peanut Butter Frosting

Way too much sugar as written. I was happy with flavor but not the look at 2 cups, so went with 3 cups, was too sweet. Not happy with texture. Would try cornstarch. Guests liked it ok.

The thyme & leeks added a different flavor than a regular beef barley soup. Everyone ate it, but no one raved. Overall, I prefer beef barley with garlic & onion.

I thought it was too salty probably due to the condensed soup. After tasting it, I chopped up & microwaved some celery, but that still didn't help enough. I'll make it again, though, as it has potential.

French Toast Casserole

I like the idea of cutting the bread into cubes. Doubling the vanilla, cinnamon & sugar makes this good enough to eat without the messy syrup.

Crumb-Coated Chicken Thighs

Excellent! Doubled everything except the salt (kept at 3/4 tsp to 2 tsp of other things) & had enough coating for 12 thighs. Meat turned out tender & flavorful.

I tried this with triple the mushrooms & chopped onions & shallots. Did not increase amount of sauce & there was a lot. Try again with pearl onions.
