Mexican Bean Salad

I doubled the ingredients but stayed with the same numbers for the dressing and, at first taste, found it excellent. I'll be curious how it is after some hours in the fridge but, just as is, I'd make it again. Delicious!

April's Chicken Fried Rice

This was a hit with the youngest, so I would definitely make it again. I used leftover basmati rice that had cooled in the fridge overnight and added peas (frozen, but slowly sauteed over medium heat for inclusion). I also used bottled mushrooms that I had washed, dried and then seared before also adding in the end step.

Spicy Fish Soup

Awesome last-minute choice for dinner, even with my substitutions. I had no green chillis in a can so I substituted some leftover green salsa and thawed spinach. I was out of chili powder so used The Firecracker Chili Powder recipe here on AllRecipes. I'm in Germany -- frozen Seelachsfilet (Pollock in English?) is readily available and what I used here.

Turkey Potato Casserole

In my case, it was a layer of leftover turkey, topped by freshly sauteed onions, topped with leftover green bean casserole, then a layer of cream of mushroom soup (which I stirred with some leftover chicken soup stock and some of the mashed potatoes) before topping with the last of the leftover potatoes.

Vegetarian Stuffing

This is an exceptionally good result for the amount of time invested. I made this for my book group's holiday potluck with the following modifications: off-the-shelf 12-grain loaf, cream of mushroom w/ garlic, about 1/2 the broth and water recommended, fresh cracked pepper (about 15 turns of the mill), generous shakes of Chef Paul's "poultry magic", and just a dried fruit and nut mix by Salad Pizazz ("cherry cranberry pecano") in place of all the suggested options. All available in a pinch at my Safeway, which was one of the best things about this recipe. My book group gobbled it up!
