Nana Dot's Irish Soda Bread

This recipe was perfect and absolutely delicious! I used 1C whole wheat flour and 1 1/2C all-purpose flour, but that is the only change I made. I loved the raisins and currants, but the caraway seeds were my favorite part! They add a depth of flavor to this bread that can't be achieved any other way. Please don't leave them out! The texture was perfect, and everyone loved it! This bread will be added to my regular rotation. Thanks for a fantastic recipe!

Spinach Quiche

I prebaked the crust for 10 minutes and used chopped ham and mozzarella instead of mushrooms and feta and I only used 4 tablespoons of butter instead of 1/2 cup. This turned out fantastic, my whole family loved it!

Ginger Muffins

I doubled the amount of cinnamon and added clove and nutmeg for a truly spicy flavor, and these muffins turned out perfect!! My husband and kids love them. Served with some warm ginger spread they are the best morning treat!

Streusel Rhubarb Bread

This is the best rhubarb bread recipe my family has ever tried! Two days after baking my first batch I had to bake a second double batch because it got eaten so quickly. We even tried it warm with vanilla bean ice cream and it was incredible!!

Chocolate Chip Banana Muffins

Some of the best muffins I've ever made! I substituted buttermilk for the yogurt, doubled the recipe and used 1 cup of whole wheat flour and 2 1/2 cups of all purpose flour. I also ran out of vanilla extract so I used rum extract. It was nice, and brought out the banana flavor. I will be making these again soon!

Coconut Smore Cookies

A very interesting version of chocolate chip cookies. The marshmallow is very subtle and lends a chewy texture to the cookie. The coconut might be better slightly toasted before being added next time. I will definitely make these again!

Old Fashioned Paradise Pumpkin Pie

Part of my cream cheese mixture rose to the surface of the pie, but I think that was just human error and not the recipe. The topping covered up the mistake nicely, so you almost couldn't tell. Next time I will chill or freeze the cream cheese longer (until very stiff) and pour the pumpkin in more carefully. All in all it was a very tasty pie.

Apple Pie by Grandma Ople

This is the most incredible apple pie I've ever tasted! I did add in 1/4 tsp. ground cinnamon, 1/4 tsp. ground cloves, and 1/8 tsp. ground nutmeg to the sugar syrup which really helped the flavor of the apples come out. I also used 5 medium size Honey Crisp apples rather than Granny Smith. I just love how the top of the pie got crispy because the syrup was poured over the top rather than mixed in with the apples. I also tried using a lattice nut crust rather than a standard crust, it really added a nice touch of flaky crunch to the pie. I will definitely be making this pie again!!
