Grilled Portobello Mushrooms

This recipe has made a believer out of people who don't believe that this can be a tasty and healthy option for lunch or dinner. For my family's taste, we used 3 cloves of garlic vs the 4.

Garden-Fresh Bruschetta

Wow this one was easy and tasty. My guests would have eaten twice as much if I had made more. We liked it so much we made another batch the next day. I mixed some garlic and parsley with butter to spread lightly on the bread before toasting.

Pumpkin Pancakes

Cornbread Muffins I

I reduce sugar in recipes whenever I can so I used 1/2 cup vs 3/4 cup. Instead of 1/2 cup of milk I used 1/4 cup of 1% milk and 1/2 cup light sour cream. I used fresh corn vs frozen. I did not precook the corn. I also added 1/4 cheddar cheese and fresh chopped chives. Family really liked them.

Zucchini Cucumber Salad

We really enjoyed this. So refreshing as a summer salad. A perfect summer dinner with the shrimp added. I did shred the zucchini, sprinkle with a little salt and let sit in colander for an hour or so to drain much of the moisture. If it sits to long after it is made, you still need to drain it again.

Zucchini Brownies

My family did not care for the texture of the zucchini. They said it was like having cocunut in their brownies which they don't happen to like. They also said the texture was more like cake than brownies.

Zucchini Patties

I am always looking for ways to serve the abundance of zucchini. My family enjoyed this recipe so much they asked me to make more for the next day. I will double the recipe going forward. They ate them plain, with salsa and with sour cream. Sour cream was voted the favorite.

Chocolate Pizzelles

I thought this recipe was excellent. I wanted to leave out the hazelnuts since I was making a separate batch of hazelnut pizzelles. I also like to make sure I have some that those with nut allergies can enjoy. So I left out the hazelnuts but added 1 tablespoon of vanilla extract.

Shrimp Scampi Bake

The was the easiest and tastiest recipe. I did reduce the butter to 3/4 cup and it still had sufficient butter but not a lot left floating in the bottom of the pan. I served it with left over rice warmed with chicken broth. Everyone then used the garlic butter to drizzle over their rice. This meal was a hit with everyone at the table.

Raspberry Almond Coffeecake

My family likes fresh made coffee cakes on Sunday morning so I am always looking for one that is relatively quick to make yet appealing to coffee cake lovers. One of the family members is allergic to sour cream. So I substituted cottage cheese for the sour cream. I had strawberries on hand so I used strawberries rather than the raspberries. Everyone raved about this coffee cake. I will be trying this one again with other fresh fruits!
