Grilled 'Fusion' Pork Chops

Reviewed: Apr. 11, 2006
Didn't have garlic or ginger paste so I used minced fresh garlic & shredded fresh ginger + fresh squeezed lime juice, etc. Good flavor, moist and delicious, will make again.

WOW ~ now that's SCAMPI. It tasted exactly like what you get at your favorite fancy restaurant! Chicken was moist and delicious, we both loved it!

Cardamom Chicken with Salt and Pepper Crust

Reviewed: Mar. 13, 2006
I've never tried Cardamom before and was shocked at the price (I found it anywhere from $8 to $18 per bottle!) but went ahead & tried it for something new. My boyfriend wasn't nuts about it but did like it and wouldn't mind having it again (hey, at least he tried it!), I thought it was delicious!

Leslie's Strawberry Breakfast Chops

Reviewed: Mar. 13, 2006
I didn't have any strawberry preserves so I used some of my Mom's homemade plum jelly and it was excellent! My boyfriend loved it so much he sopped up every last drop with the Pilsbury Grands biscuits I served with it and he doesn't even LIKE horseradish!

Pork Chops with Burgundy Mushroom Sauce

Reviewed: Oct. 1, 2007
I used Fairbanks Merlot from Smart & Final (as that's what I had on hand) and I have to tell you, this is amazing! Quick, easy & delicious! A new favorite!

Aussie Chicken

Reviewed: Mar. 17, 2006
If I could give this 10 stars I would, even my boyfriend (who hates anything honey) LOVED it. He actually thought it was a hollandaise sauce! Quick trip to a heart attack but worth it!

Marinated Flank Steak

Reviewed: Sep. 9, 2007
My honey looked up at me after the first bite & proclaimed "WOW Honey, this is REALLY GOOD!!!" - Best marinade I've come across. I used it on some NY steaks (if it's not rib eye, it's gotta have some kind of marinade if you ask me) that we had in the freezer and man, truly awesome, delicious, wonderful, WOW steaks! The only things I did differently were that I substituted olive oil, added a little more garlic than called for (I always do that) plus some white pepper. This is a keeper!

Mahogany Chicken Wings

Reviewed: Apr. 11, 2006
Didn't have wings so used boneless skinless thighs and marinated for 10 minutes. I used Kikoman chili-garlic sauce, all other ingredients as listed. I poured the remaining marinade over the chicken as I turned it, I cooked the thighs for a total of 30 minutes. The result was moist and delicious - we absolutely loved it! (served w/white rice and a little of the juice poured over) Will make again and again! Do try this recipe!!!

Pork Chops Stuffed with Smoked Gouda and Bacon

Reviewed: Apr. 11, 2006
Delicous! The smoked Gouda & bacon add an interesting depth of flavor ~ we used cilantro instead of parseley as neither of us like parsely and it was fantastic! Will make again!

Rib Eye Steaks with a Soy and Ginger Marinade

Reviewed: Apr. 11, 2006
One of the better marinades for steak I've tried, usually ribeye stands alone no matter what you do with it but this was a tasty change - we both loved it. I used Stone Pale Ale for the beer.

Baked Havarti Chicken

Reviewed: May 31, 2006
This was fantastic! Instead of using store bought Italian dressing I made the Betty Crocker version from my cookbook and marinated the chicken in that. We loved this dish - will make over & over again. I served it over white rice w/chicken base, a little oregano, garlic & chopped onions on the side, it was a perfect compliment.

Butter Flaky Pie Crust

Reviewed: Jun. 15, 2006
Easily the most flavorful pie crust I've ever made, browns up nicely and has a wonderful texture! Can't miss! Instead of doing it the old fashioned (laborious) way I just put the flour, salt & butter into my stand mixer w/the heavy stirrer attachment on low & once crumbly added the ice water a tablespoon at a time until just right, formed a ball by hand and then off to the fridge it went in saran wrap. Rolls out nicely, minimal separation at the ends, a lovely consistency to work with.

Salmon Fillets with Creamy Dill

Reviewed: May 21, 2007
This was SO moist and delicious! The only thing I did differently was exchange dijon for the regular mustard. My boyfriend said we could've halved the mustard but it was still absolutely delicious and we ate every bite, one of the best Salmon recipies I've ever tried. I cooked it in the oven in a hard annodized fish pan with raised ridges and the fish slid right off the skin (which came up easily on it's own for cleanup - I'd sprayed the pan with Pam) after about 30 minutes. Excellent dish - gotta love those Alaskans!

Mozzarella Chicken

Even though a bit of a pain to stuff (I used boneless, skinless thighs pounded flat) this was very good. Will make again.

Chicken with Grape Tomatoes and Fried Basil

Reviewed: Apr. 12, 2007
The crunchy basil was quite different but added just the right touch. Enjoyed this very much - served over white rice. I had guests over and served it for lunch, even a self admitted tomato hater my friend thought it was great...

Chicken Breasts in Caper Cream Sauce

Reviewed: Nov. 16, 2006
This dish is fantastic! I didn't have lemon pepper so I squeezed a Meyer lemon & used cracked pepper. Absolutely delicious! I also added some lemon to the white rice I made. It tastes much like the lemon butter sauce the Brigantine uses on their Calamari Dore which I love...
