Salmon Fillets with Creamy Dill

This was SO moist and delicious! The only thing I did differently was exchange dijon for the regular mustard. My boyfriend said we could've halved the mustard but it was still absolutely delicious and we ate every bite, one of the best Salmon recipies I've ever tried. I cooked it in the oven in a hard annodized fish pan with raised ridges and the fish slid right off the skin (which came up easily on it's own for cleanup - I'd sprayed the pan with Pam) after about 30 minutes. Excellent dish - gotta love those Alaskans!

Ranch-Style Thighs

I've made a similar dish that was much better using mayonaise instead of ranch & just coating with seasoned bread crumbs I'd added some parmesan & white pepper to. I threw it in the rotisserie for 30 minues & voila! With the ranch it was a bit lacking, try it with mayo.

Chicken with Grape Tomatoes and Fried Basil

The crunchy basil was quite different but added just the right touch. Enjoyed this very much - served over white rice. I had guests over and served it for lunch, even a self admitted tomato hater my friend thought it was great...

Sticky Sesame Chicken

I added a bit too much lemon (couldn't waste all that Meyer lemon!!!) & had to thicken it up w/corn starch but I think it worked out better that way the second time! My honey loved it over rice...

Super Crispy Roasted Goose

It might be that I just like duck better, the breast was flavorless & the only thing that my honey liked was the skin which was crispy. The stuffing and gravy were good but I'll pass on the goose next year.

Lizzy's Creamy Chicken Bake

I used 1/2 the onion soup mix as well & it was perfect! I did use equal parts butter & olive oil to brown the chicken but I cut the chicken into bite sized pieces (the way my honey likes it). I used the extra onion soup mix in the rice ~ it was the perfect compliment! Very good!

Chicken Breasts in Caper Cream Sauce

This dish is fantastic! I didn't have lemon pepper so I squeezed a Meyer lemon & used cracked pepper. Absolutely delicious! I also added some lemon to the white rice I made. It tastes much like the lemon butter sauce the Brigantine uses on their Calamari Dore which I love...

Slow Cooker Tipsy Chicken

Next time I'll halve the olives & put them in a cheesecloth bag so only the flavor is infused. They were a bit much so we picked around them but the flavor was excellent. I would think you could use some of the brine as a substitute for the olives.

Easy, Cheesy Zucchini Bake

I started out w/a HUGE zucchini from my garden, lopped off the ends so it would fit in the dish and pared off flat spots on the bottom so the halves wouldn't wobble. The zucchini didn't cook enough but that was probably due to its size, the parts that did cook all the way through were tasty, other than that it was good, not great. I wouldn't mind making it again but it wouldn't be my first choice.
