Gingerbread Men

THE BEST gingerbread cookie recipe I have tried. It was super easy and tasted great! The consistency was perfect and my 3 and 5 year old had no problem rolling out the dough and cutting out their favorite Christmas shapes. I was a bit skeptical since it did not call for molasses and used butterscotch pudding mix instead. I am so glad I trusted the reviews and the poster, Kim. This will now be my go-to gingerbread recipe every year.

Jamaican Jerk Dry Rub

excellent rub! I adjusted the serving size down to 6 and had enough for 3 steaks. Loved how the rub created a "crust" on the steak after it was grilled! Husband loved it! He eats ketchup on everything even if it has been marinated but did NOT use it on this!

Fresh Southern Peach Cobbler

Look no farther for a peach cobbler recipe. This is it! I have tried several different recipes and something is always just a bit off. Not this. This is spot on. The cake-like topping is moist and the sugar-cinnamon mixture adds the perfect touch. My husband said he would pay for this!

Watermelon Fire and Ice Salsa

MAKE THIS!!!! I was looking for a new recipe to make for a get together and I found this. Very skeptical using watermelon instead of tomatoes but tried it anyway. My husband does not like homemade salsa but he LOVED this! It is very refreshing and you can control the amount of heat you put in. Definitely take others advice and let the diced SEEDLESS watermelon drain for a few minutes in a paper towel lined strainer. Naturally, you will not be able to get all the juice out and that's ok. The only jalapeno peppers I had were jarred and they worked perfectly fine. The smell and taste is so refreshing. Great with Scoops, Hint of Lime, and Pepper Jack tortilla chips. Great conversation piece too:)

Spinach and Strawberry Salad

You won't be sorry! I am very funny about fruit being mixed together with food but this was DELICIOUS! I did not have sesame seeds or poppy seeds and I ran out of sugar so I didn't use quite 1/2 cup and it was to out of this world! I can't imagine what it would taste like if I had all the ingredients. To make up for not having the seeds I added sugared pecans to the top. Made this for church and people were scraping the bowl. One man said it was more like dessert than a salad. Those of you who are concerned about making things healthier, use less sugar or use the dressing on the side. This is definitely a must especially now that strawberries are in season. Excellent!

Fruit Dip II

Absolutely delicious! Super easy, super good! tons of compliments and requests for the recipe. Makes my kids who don't eat much fruit, want to eat fruit. Not too sweet. I used 1/3 less fat cream cheese and you'd never know. I could eat this stuff by the spoonful! no need to make any changes!

Banana Split Cake

Have mercy on my soul!!! Heaven in my mouth! Perfect summer recipe or a great way to taste summer in the middle of winter. Just for a variation, I've added shredded coconut on top and I've also added cherries on occasion. You will NOT be disappointed and it's a definite crowd pleaser. MAKE THIS!!!

Mimi's Zucchini Pie

This was pretty good. Mine turned out a little dry but could be because I had a little less parm cheese called for. It also was somewhat bland so I followed other recommendations by adding garlic and Italian seasoning. I also shredded the zucchini, squash, and onions for the kids. I passed this off as an egg pie to my kids so they asked for sausage. it actually was very complimentary to the dish, surprisingly. I'll def make this again but will add the spices again, more parm, and try adding bacon as another reviewer recommended.

Coconut Cream Pound Cake

OMG! Those were the 1st words out of my husbands mouth when he tasted this delicious piece of heaven. I used Plugra butter and Swan's cake flower and that made all the difference. Like another reviewer said use real butter. This is great the way it is. Thank you for sharing;)

Baked Pork Chops I

Easy and yummy! Pork chops stay tender and moist. I added extra mushrooms and chopped onions. Whole family loved it. This is one of my regulars.

White Bean Chicken Chili

Excellent!!! Not too spicy for my 2 and 4 yo to eat! Simmered in pot throughout the day and it made the whole house smell delicious! Try it, you won't be disappointed!

Chicken Scarpariello

very easy and quick. only gave it 4 stars because it was a tiny bit bland. HOWEVER, it's nothing that couldn't be fixed. My husband, 2 and 4 year old children LOVED it!!! Dinner was very quiet due to people eating it up;) Will definitely make again.
