Orange Nut Bread

Reviewed: Oct. 18, 2011
This had good flavor, but it was more like a dry orange biscuit than bread. Maybe it could use butter or oil?

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Reviewed: May 19, 2010
Excellent salad. I sometimes substitute goat cheese or blue cheese, and they both work well.

Mixed Citrus Vinaigrette

Reviewed: Feb. 1, 2010
This was pretty good. I only had white wine vinegar, so I added a tsp of sugar to compensate for the lost sweetness of the balsamic.

World's Best Pumpkin Pie

Reviewed: Oct. 7, 2009
I was skeptical, and only made this recipe because I was missing key ingredients to make my normal pumpkin pie. It turned out wonderfully with modifications. I used 1 cup sugar, and it was still very sweet. I think it would be disgusting with the full amount of sugar. I also cut the milk to 3/4 cup and used a deep dish pie crust.

Creamy Chocolate Frosting

Reviewed: Jun. 4, 2009
This was not 'the best; chocolate frosting that I have ever made, but it is definately the easiest...and I am lazy so I find myself making it time and time again. I have made it with evaporated milk and regular, and cannot really tell a difference (it is so sweet that you can't taste it either way).

Pumpkin Cake III

Reviewed: Nov. 11, 2008
This cake was awesome. I halved the recipe (we have a small family), used half applesauce/half vegetable oil, and baked in a bundt pan for 25 min. I iced it with the cream cheese frosting II recipe from this website. I will be making this for Thanksgiving!

Light Oat Bread

Reviewed: Jul. 22, 2008
Wow! This was amazing! I live in Denver (high altitude) and dont have a bread machine, so I wasnt sure if it would turn out. I kneaded the dough for 15 min, let it rise for 45 min, punched it, put it in the bread pan and let it rise for another 45 min. I baked it at 325 (convection oven) for 35 min. My kids gobbled it up. I wish I would have made 2 loaves :(

Creamy Spinach Pasta

Reviewed: Jun. 1, 2008
This was good, but needed a little extra. I added fresh garlic and tomatos and it really helped. The sauce was nice and creamy. This was very easy to prepare and everyone enjoyed it.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

Baked Ziti II

Reviewed: Jan. 12, 2008
I made this once following the recipe, and once following the suggestions made by PMCKAY1717. It was better PMCKAY1717's way (parsley with the ricotta, layering, not cooking the ziti all of the way).

Butterscotch Bread Pudding

Reviewed: Sep. 6, 2007
Wow, this was amazing. I used low fat margarine and added raisins. I also cut the sugar in half. The butterscotch chips are very sweet, so I cant imagine using the entire amount of sugar.

Herbal Tuna Salad

Reviewed: Aug. 23, 2007
This is the best tuna salad recipe I have ever had. I added fresh parsley, and used 1 tsp lemon juice instead of the zest.
