Curried Potato Salad

Reviewed: Aug. 29, 2010
I had to make a few changes due to what I had in the house and it still came out great. I used just mayo, no celery and chopped dill pickles.

Ratatouille

Reviewed: Aug. 3, 2011
I loved this recipe. I cooked the onions first and added smoked paprika. BUT, I added goat cheese to the leftovers and that made it amazing..I will add crumbled goat cheese to the dish in the last 5 minutes next time.

This is my go to meatloaf! I just use onion powder, as it is better for the kids. This comes out perfect every time.

French Beef Stew

Reviewed: Mar. 6, 2011
The meat took longer to cook, probably 90 minutes. The mustard was a great addition. I only had veggie broth and needed to add quite a bit of salt. This would probably be better in a slow cooker.

Grandma Minnie's Old Fashioned Sugar Cookies

This came out great. It does feel like it will be too crummy when you begin to roll it out, but the added flour and extra rolling make it just fine.

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Sep. 20, 2010
This is delicious! I made some changes based on the reviews. I put the tortillas in the oven to harden them so they wouldn't be soggy. I added spinach, corn and chopped red pepper. I also substituted plain yogurt for sour cream on the first layer and used sour cream for the top.
