The Best Red Enchilada Sauce

This was SO easy to make and to see it all come together was beautiful. My husband and I were not quite sure if we would like it because the ancho chiles don't smell the best when working with them but it turned out awesome! The color is a beautiful bold red and the flavors all come together so well. I don't normally keep "corn oil" on hand, but we went out to get the ancho chiles so I bought some corn oil at the same time. I think it would have been fine to use a different oil, however the corn oil definitely adds to the recipe! I also got three "cans" worth out of the recipe, so I now have enough for a later time! Thank you for sharing!

Refried Beans Without the Refry

Followed the recipe exactly. They smelled amazing throughout the entire day and the turned out delicious! Thank you for sharing. It is definitely a recipe you can adjust based off your own taste preferences (if you want more jalapeno or you want to add some different flavors via seasonings, etc.). I can't say I won't ever buy a can of refried beans again, but when I plan enough in advance, I will use this recipe!

Fluffy White Frosting

Truly a light and fluffy recipe. If I could give two tips to help anyone else. First, it says to cook over medium high heat until bubbly. I really found that you almost need to go about thirty seconds past the bubbly. The sugar mixture turns clear and you should be able to see down to the bottom of your pot. Second, at the end it says to whip for 7-10 minutes. This is important and if you don't whip long enough you will not have a smooth frosting that holds up. You may even need to go a little longer than the ten minutes. Overall, this is a fantastic, simple recipe that I will use over and over again. Thank you for sharing.

Lemon Lover's Pound Cake

YUM! Thanks for sharing. The only thing I did different (because apparently I didn't read through the entire recipe and didn't see that I needed sour cream) so I had some vanilla bean yogurt that I substituted instead of the sour cream. The cake cam out yummy and was exactly what I was looking for. I took 1.25 cups of powdered sugar and 1Tblsp of lemon extract and mixed in enough lemon juice until it was the consistency I wanted and put that on top and it gave it a yummy lemon glaze.

Aunt Bert's White Cake

I feel bad giving this cake a 1 star, however, I followed the recipe exactly this afternoon. I read previous reviews so I knew what others did, but I tried to make this just like the recipe stated. I'm not sure where I went wrong. The boiling water at the end seemed strange, but I've made other cakes with a runny batter, so I though I would keep going as the recipe stated. I put the cake in the oven and checked on it half way through and was SHOCKED to see a mess in my oven. The cake had boiled over into a not so fun mess. Needless to say, I'm cake-less this afternoon. Thankfully, it wasn't for a birthday or anything important. I was just looking for something new to try. I don't think I will try this again.

Apple Pie by Grandma Ople

Wasn't too sure about this, but thought what the heck. It was just for me, so no one to impress. That's too bad though because it was A-Mazing! I did add almost a full tablespoon of cinnamon (I love cinnamon) and a splash of vanilla. I'm super happy that I put it on a foil lined cookie sheet to bake because it did boil over some due to the mixture that goes on top. I wasn't too sure about making a pie that didn't have anything mixed in with the apples. I gave the pie pan a couple of smacks on the counter to make some of the yummy goo seep down into the apples. The mixture on top turns into this chewy caramel-like topping that just makes the pie taste delicious. I actually used Honey Crisp Apples and so I cut the white sugar back to only 1/8 Cup because I didn't want it to be crazy sweet. Great pie recipe. Thank you so much for sharing. I might even try using that topping for another fruit based pie.

Cream Filled Cupcakes

These were terrific. As I was making the recipe, it was very similar to a family recipe that my Aunt gave me. Instead of just putting in 1cup of water, I put in 1cup of strong black coffee (cooled). The flavor is great and I think they are going to be wonderful. Thanks for sharing! I don't have a piping bag, so I used a zip-lock and cut off the corner. Also, I used a small knife to cut the circle and then used the vegetable peeler to scoop out the circle. It worked great.

Mini Cheesecakes III

I made this being skeptical because I have another recipe for a large cheesecake that I love. However, these turned out great. I read a few reviews before hand, but I didn't change anything on the recipe besides I didn't put the lemon zest in. I didn't read all the reviews, so someone may have already mentioned this, but when I cook a cheesecake, I put a pan of water on the bottom rack. I did that with these. I also learned that you NEVER want to open the oven door because for whatever reason, that is what causes the cracks. So, I used the pan of water on the bottom and didn't open the door for 25 minutes and they turned out gorgeous. No cracks and beautiful appearance. Thanks for sharing!

Used the food processor method. Turned out great. I used semisweet chocolate chips. Next time I will try milk chocolate. Overall easy recipe, I had it put together and in the fridge within 20 minutes! Thanks for sharing!

Best Big, Fat, Chewy Chocolate Chip Cookie
