Butternut Squash Enchiladas

I like to make the real recipe before giving a review. You can't go wrong with this one as is. Excellent! It is also a good jumping off point if you don't normally have some of the ingredients. I like to add black beans and a dash of cumin. I put the sour cream in the enchiladas, etc. Basically...don't be afraid even if you don't have everything perfect. It is a great recipe to work with.

Easy Pie Crust

Let's just say I was hesitant to try it but I was wrong. Much easier and super tasty. Too salty for dessert so just leave it out for a pie (like others have said).

Tasty. I used about 1 lb of squash (if that helps since they come in all sizes) but I think a little more would work well. It is sweet tasting.

Chuck's Favorite Mac and Cheese

I'd give this 4 1/2 stars. Followed exactly minus the butter for the bread crumbs. It is nice to have a mac & cheese recipe that doesn't require all sorts of ingredients. These are always on hand.

Perfect Chocolate Cake

Wow. Really Good. Everyone LOVED it. Buttercream recipes is really good just add milk if you need it softer. Add crushed up oreos to the whipped cream filling. Super good.

Very good! Does make a lot like others mentioned. Try a 9x9 and it fits cut according to recipe directions. Kiddos really liked it.

Awesome Broccoli Casserole

There are many slightly different versions of this that I have been making for years. This one is really good but easy to make more healthy. You can use fresh broccoli, you just need to cook it before. I used hot water for the dressing instead of butter, yogurt cheese instead of sour cream, healthy soup and less sharp cheese. Very good.

This is a really good recipe. I make it all the time. We usually can't wait for the whole baking time but don't worry, it still tastes great if your children (or guests) demand you pull it out early. It happens almost every time in our house.

Throw Together Mexican Casserole

This Texan also agrees that it isn't so "Mexican" but with a few changes this can be a really excellent dish. I guess a make more than a few changes...I don't usually use meat, I like it better with rice instead of noodles, black beans instead of kidney, make your own taco seasonings (allrecipes has some great ones that taste more authentic), throw in a can of tomatoes instead of the sauce, more salsa and some cheese. I guess this turns it more into a great rice and beans recipe. Still it was a good inspiration.

Potato and Egg Casserole

This is really good. I use Season All for the salt between layers. Also, I don't even use close to all the butter (about 1/8-1/4) because it is just way too much. I have use yogurt cheese instead of real sour cream and it turned out great.

This is good if you make the original recipe but as I have made it more I like to change it up. I like it best when I throw in all the different veggies I have in my fridge or some canned vegetables. I add some spices and reduce the cheese (use some feta for more flavor) and reduce the meat and use low-fat and low-sodium ingredients. It can handle lots of diverse changes. Great base recipe.

Slow Cooker Pork Chops II

The reason this is five star is because the amount of work is so small for such a great payoff. The taste is excellent (don't add the oil or reduce significantly because you don't need it and it doesn't really need any extra salt). The meat turns out very tender and it is so easy. My kids and husband, I am feeding 5 boys, like it best when I make a gravy out of the sauce (just make extra sauce, a quick roux and add some milk) and serve it up with mashed potatoes, corn, carrots, etc. Also great with rice and vegetables. As other reviews mention you can change it up a lot with good results.
