Charline's Sweet Potato Casserole

This is the best sweet potato casserole! I love sweet potatoes and coconut so it was great! Everyone loved this recipe, even my husband who doesn't really care for sweet potatoes. I used canned sweet potatoes to cut down on time and I added more marshmallows in with the topping. This is my favorite part of the Thanksgiving meal and I will definately make it every year!!

Mmm-Mmm Better Brownies

These are pretty good. I prefer a box mix for fudgier brownies, but these will do in a pinch. They're very quick and easy to throw together with ingredients I always have on hand. This will be my go to recipe when I'm out of the box mix.

Rach's Broccoli Casserole

This is a wonderful way to turn healthy veggies into a naughty treat! Love this recipe and had to control myself from eating half of it for dinner! I did change it up a bit. I used 2 16oz packages of broccoli & cauliflower blend since that is what I had on hand. I used cream of celery soup since I don't like cream of mushroom and I also omitted the onion since I don't like onion. I forgot to add the eggs, but it didn't need them. I made this years ago for a holiday dinner and everyone loved it. I would definately eat this over green bean casserole! ** I made this a second time as the recipe stated and I would definately suggest leaving out the eggs! It had a weird scrambled egg consistency and I much preferred the casserole without the eggs.

Mini Cheesecakes

These had a very odd texture. I tasted the batter before they were cooked and it was yummy, but after cooked the cheesecake just didn't have the nice smooth cheesecake texture. And had kind of an eggy flavor. I mixed the batter well with my mixer so I don't know what happened to it. They're not terrible so we will eat them, but I won't be making this recipe again. I'm glad I just made them for home and not to bring somewhere.

Cheddar Sausage Muffins

These were good, but not great. I had a recipe years ago that did not use the condensed cheese soup and it was much better. These muffins were a little too moist, they did not have the right muffin consistency. With a little tweaking these would be good.

Phyllo Chicken Packets

I make a few changes to make this a low fat recipe. I spray Pam between 3 phyllo layers. Then I spread on low fat chive and onion cream cheese. Top with a chicken breast and roll up. Spray tops with more Pam and sprinkle with parm cheese. My husband loves this recipe!

Savory Turkey Gravy

I was looking for a recipe using the turkey pan drippings as my mom and grandma always did. So, instead of the stock I used 4 cups drippings. I mixed 1 cup water with 1/2 cup flour and added poultry seasoning and salt to taste. It was the perfect consistency. Quick and easy, a basic gravy that I was looking for.

Cream Cheese Tart Shells

Yum!! Of course even such a simple recipe I screwed up, but it still turned out yummy! I usually cannot make pie dough but this turned out great and is so much simpler than traditional recipes. I wanted to make a larger batch and ended up screwing up my ratios. I ended up putting in 16 oz cream cheese, 1 1/4 cup butter, and 3 1/2 cups flour. Even messing up the ratios the dough turned out perfect! I realized I had put too much cream cheese so just added more flour and left the butter alone. Maybe it was better putting in less butter because I still got the yummy butter flavor and flaky dough without the greasiness that some reviewers mentioned. The recipe yielded 2 dozen regular cupcake size tarts and one 9" pie crust that I used to make a quiche.

Pecan Tarts

Yum! I used another reviewers suggestion and used the cream cheese tart shells. The only other change I made was using light corn syrup since that is what I had on hand. These are so simple to make and turned out very yummy! Even my hubby who normally doesn't care for pecans said these were really good. I actually have another batch in the oven right now!

Easy Bacon and Cheese Quiche

I changed this up a bit and it came out awesome! First I fried up about 1/3 lb fresh bacon. I used the pre-chopped frozen onions, which I sauteed in the bacon grease. I added 4oz cream cheese to the onion to melt and then mixed in the cooked bacon and 1 cup sharp cheddar. I spread the mixture on the bottom of the pie crust. I mixed together the eggs and 1 cup milk, salt, pepper, and garlic powder. Then, I poured the egg mixture into the crust and mixed it up a bit so the onion/bacon/cheese mixture wasn't just stuck to the bottom. Followed the baking time and it came out perfect! Very nice flavor. I will definately keep this recipe on hand.

Sausage Potato Bake

It's hard to find a recipe that doesn't get overcooked and dry after 10+ hours in the crockpot (until I get home from work.) This recipe is perfect for the crockpot and is so simple! Added potatoes, sliced smoked bratwurst, cream of celery soup, beef broth and onion soup mix (instead of the vegetable beef soup.) I also added in some baby carrots so it was more than just meat and potatoes. Next time I'm going to use French Onion soup and add corn.

Chicken Enchiladas II

My husband loves this recipe. I personally love flour tortillas and I love how they get extra soft in the sauce. I double the sauce and use cream of chicken in place of the mushroom. The sauce is a little bland so next time I'm going to try putting some salsa in to give it some extra flavor.

Baked Apple-Pecan Maple Pancakes

I gave it 4 stars because I did change it up quite a bit. First I used canned apple pie filling which made it quick and easy. I poured that in the bottom of a 9" cake pan and sprinkled on some chopped pecans. Then I mixed together 2 cups Bisquick, 1 cup milk, 1 egg, and 2 TB butter. Poured the batter over the top and sprinkled with brown sugar and dotted with butter. This came out excellent! The batter was incredibly moist and we loved it. Definately a keeper!

Campbell's® Cheesy Chicken and Rice Casserole

This is an excellent easy recipe! It's one of the only ways I can get my picky hubby to eat his veggies! I love that I can use any kind of veggies I have on hand. The only reason this gets 4 stars is that after making this recipe many times I've found it's important to use instant rice! It comes out perfectly cooked when using the instant rice, but I always end up with hard/undercooked rice when I use regular. This is one of those recipes I keep coming back to when I don't know what to make for dinner since I usually have everything on hand.

Baked Pork Chops I

This recipe was pretty good. I made some changes and would make even more if I make this again. I followed some reviewers suggestion and used 2 cans of soup - mistake. The pork chops were just swimming in soup. Should have just stuck with one can. I added extra garlic powder, salt and pepper to flavor on both the pork chops and in the sauce. I baked the chops for 45 minutes, poured on the sauce and baked for 30 minutes more and they were perfectly cooked and moist. I don't know, next time I may do what other reviewers did and just serve the sauce on the side.

Oh-So-Good Chicken

Great recipe with some tweaks. First, no mushrooms because we don't like mushrooms. I mixed 3 cups of cooked instant rice, 1 jar medium salsa, 1 can green chilis, 1 can black beans, cooked diced chicken breast, sour cream and extra cheese. The first time I made it as the recipe just minus the mushrooms. It was good but my hubby said it needed more spice and just something "more." Trying it with medium salsa, green chilis and black beans. This recipe is definitely a keeper.

Slow-Cooker Corned Beef and Cabbage

The slow cooler is the only way I will cook corned beef. It comes out moist and perfect every time no matter how long you cook it. If cooking all day the veggies do not need to be cut small. I usually put the carrots in whole and the potatoes peeled and cut into 1/2 or 1/4's depending on their size. I would definitely leave the cabbage in large pieces as it cooks fastest. I don't add any liquid but I'm sure the beer would give it a little extra flavor if you like beer.

Slow Cooker Casserole

Unfortunately this recipe has a lot of problems. It is, like another reviewer commented, a souped up Ramen noodles recipe. Personally I love Ramen noodles and I love salt. But, as 99% of the other reviews mentioned it is too salty! I think inherently the problem lies in the noodles cooking in the soup. The noodles soak up the super rich flavor. I even only put in 2 packets of Ramen seasoning, but it was just too much. My husband wasn't home for dinner and it's a good thing. He would have taken 2 bites and been done. I also think the butter is completely unnessary in this recipe, even though I love my butter. It seperated from the soups, leaving puddles of oil on top. I've been trying to think about how to improve on this recipe so it's not so salty and rich, but I think it would completely change the recipe. Growing up as a kid my mom would make a similar type dish that also used condensed soups, but she would simmer the meat and soups together, cook skinny egg noodles seperately and mix it all together. It was a much better ratio of noodle to soup. She didn't add any additional spices because it really didn't need it (my dad always added lots of black pepper to his.) It was SO much better and not salty at all. IF I ever get a craving for a creamy Ramen noodles and decide to try again I'll cut out one can of soup and replace with 1 can of water, eliminate the seasoning packets (or just use 1 max.) And I'll do as some other reviewers have done and cook the noodles seperately.
