Thai Orange Chicken

My substitutions: Safflower oil for olive oil, Hoisin sauce for ketchup, and 1 tsp. Red curry for red pepper flakes. Added 1 tsp. Orange zest to sauce. And Garnished with sliced green onion. I also recommend putting the corn starch into cold water, then add to the sauce. EVERYONE LOVED IT!

I followed directly, it rose twice above height of spring form pan and then browned way too much for my liking. BUT- DELICIOUS! The taste was awesome , everyone raved anyway!

This recipe is awesome. Only problem I had is the sauce did not thicken in said time, I kept going much longer, eventually added corn starch slurry to thicken before serving. still delicious!

Easy and adaptable. After it comes out of the oven, I squish the granola in the tin foil until it cools and hardens. I get some nice big clumps that way.

Easy Morning Glory Muffins

My one complaint is that they were too oily. I usually substitute 1/2 applesauce and 1/2 oil when a recipe calls for oil. But since I did not have any on hand, I made per recipe instructions. When I took the muffins out of the pan, there was a thick coat of oil in the pans and they smelled of the canola oil. However, when they cooled and I ate them, they were very very tasty and little hint of oil flavor. I will use this recipe again with my applesauce substitution.

Bullseye Eggs is what my husband calls them, likes them over-easy. I use a heart-shaped cookie cutter then toast the hearts separately so he has extra bread to dip in.
