Mom's Zucchini Bread

I saw this recipe and thought it would be a good way to use up some extra zucchini. Was I right! I had 2 very ripe bananas, mashed them and added to the recipe. Because of this I was able to knock down the oil to 1/2 C. I also used brown sugar and white instead of all white. Also made in cupcake pan sprayed with veg. oil. Baked 25 min. Delish.

German Apple Cake I

Make this cake!! This was so easy and so delicious. The only change I made was 1C white sugar and 1C brown sugar. Next time I'm going to sub 1/2 C applesauce and 1/2 C oil instead of 1C oil and I will try a little less sugar. For novice bakers like me, the original recipe is THE BOMB!

Pineapple Banana Bread

Extremely well received!! In all fairness, I did modify it to suit my family's dietary requirements. I knocked the sugar down to 1 cup (1/2 C. white 1/2 C. brown), 3/4 C. veg.oil, 1 tsp. vanilla, 20 oz. can crushed and drained pineapple (what I had), and 4-5 OVERLY ripe bananas. Bake 350 1 hr. OMG!!

Vegetarian Chickpea Sandwich Filling

Baked Corn II

I made this recipe as stated. It was too greasy and too wet. Even though I extended the baking time to a good 90 min. it was still too moist. It had a good flavor though. I would make this again with the following changes: definitely drain the whole kernel corn, use only 1/2 cup sour cream, and most of all, use only 1/4 cup butter.

Skillet Ham, Cabbage and Potatoes

This was true cold-weather comfort food! In all fairness, I do have to state that instead of ham I used a 16oz. pkg. of turkey keilbasa and added 2 peeled, cored and chopped golden apples. It was so tasty!! Thank you!

Southwest Chicken

I thought this was tasty but I noticed that the sauce cooked down alot so I added an 8 oz. can of tomato sauce and I sprinkled in a left-over packet of taco seasoning mix. I also shredded the chicken and mixed it all together. This was really good served over a bed of yellow rice!

Big Soft Ginger Cookies

Major addiction! It's worse than the potato chip phenomenon. You really can't only have one. I defy you! That said, these truly are delectable. I did tone down the cloves (not a big fan) to 1/4 tsp. I must now whip up another batch since I let my addiction get the better of me!

Turkey Cabbage Rolls

This was truly delicious. I did make my own changes, however. I used ground chicken instead of turkey and threw in a couple cloves of minced garlic with the onion. I also added 1/4 tsp. poultry seasoning to the chicken/onion/garlic mixture. When the meat mixture was cooling I added 1 cup shredded mozzarella to it. As far as the liquids, I used 3 8oz. cans tomato sauce (instead of 1, paste and water). This made alot of yummy sauce!!

Chewy Coconut Cookies

I upped the ante of coconut to 2 cups because I'm such a coconut freak and they came out fantastic. I also needed to cook them longer because of this but they are so well worth it. Still nice and chewy from the cookie tin (6 days later!)

Outrageous Chocolate Chip Cookies

Easy to prepare, great texture, but so not rocked by the taste. Actually instead of one great flavor cookie, you get a bland tasting combination cookie. I'll keep looking.

Pecan Pie Muffins

Every person who ate these loved them! I must say I was skeptical at first (only 5 ingredients) but wow! Delicious! I seemed to have a hard time getting the butter and eggs incorporated to the smooth texture as stated in the directions, so after three min. of beating, just mixed everything together and voila! I did however bake for 25 min. though. Thanks!
