Asian Orange Chicken

This recipe has a wonderful flavour. I added a lot more orange zest because I was craving a good orange taste and I also added a few drops of sesame oil as per another reviewers suggestion. As for the cornstarch problem that everyone had been complaining about, a quick glance at the amount of sauce in the pot told me that the cornstarch measurement was WAY off. I only used about 2 teaspoons with a bit of water and the thickness of the sauce was perfect. I also added broccoli which really picked up the orange taste...delicious!!

Spaghetti With Peanut Butter Sauce

Yummy recipe! I followed the example of other reviewers and used coconut milk instead of cream and stock instead of water. I also added 1 tablespoon of lemon juice, a few dashes of fish sauce, 2 teaspoons of sambal oelek, and 1 teaspoon of crushed ginger. I stir fried some pork strips, onion, red pepper strips, sliced carrot, and broccoli and added that to the spaghetti and sauce. It had a nice mild heat to it and a wonderful peanut taste!

Basic Microwave Risotto

This was excellent! I scaled it down to 2 servings and it came out perfect. I had little faith in a microwaved risotto but this recipe proved me wrong.

This turned out perfect! My husband is French-Canadian so we've had cretons a lot in the past. We can buy it here as well but this homemade version is going to be the new norm in our house! I would feel confident serving this to his Grandmother the next time we visit her in Quebec. I processed it for about 10 pulses in the food processor after it was all done just to break up the onions a bit more.

Spinach and Rice (Spanakorizo)

This was fantastic! I had to change the recipe slightly because I didn't have tomato sauce or fresh spinach. I used 300g of frozen spinach, thawed and chopped, and I added a big chopped tomato to make up for not having tomato sauce. I added 1 cup of rice instead of a 1/2 cup and I used 2 1/2 cups of water. It took about 30 - 35 minutes to cook, with the lid on. The rice was perfectly cooked and the flavours were so yummy. The feta and lemon juice made it even better! This will be a regular in our house.

These meatballs were excellent! I changed the recipe slightly due to lack of ingredients and time. I omitted the celery salt, tomato sauce, and 1 Cup of water. I added 2 tsp. of ginger, a few shakes of crushed red peppers, about a tsp. of cayenne pepper, and a Tbsp. of fine dry bread crumbs. I cooked the meatballs in an electric skillet at 325 for about 30 - 35 minutes then drained them and added my own sauce. They were so good...my husband and I were like vultures waiting for them to cook!
