Grilled Mushroom and Swiss

Followed other reviews and added some chopped garlic to the mushrooms. Had a bag of frozen chopped spinach in the freezer so I took a handful and added to the mushroom/garlic saute. I had monterey jack cheese to use and it melted very nicely. Excellent meatless meal, everyone loved it!

Chicken Asparagus Roll-Ups

Delicious! I subbed monterey jack cheese (what I had on hand) and put a little sauce inside the roll up as others recommended. We all loved it.

Tomato and Garlic Pasta

Delicious! I added some mushrooms to the garlic, added the peeled tomatoes and let it cook down. Didn't need tomato paste as liquid released by mushrooms/tomatoes and some of the cooking water from the pasta plus the cheese made a nice light sauce. Gave a good sprinkle of cayenne pepper - such a great dinner.

Best Black Beans

Great taste, easy to make, healthy... A winner! I rinsed the beans and added some veg broth. Sauteed the onion and garlic before adding to beans. The cayenne pepper and cilantro are perfect in this

Slow Cooker Carnitas

Very good and versatile. I cut up my pork shoulder into chunks, trimming away big sections of fat (but still leaving plenty of marbled meat) doubled the spices except for the cinnamon - I kept that the same. When it came time to fork shred it was still a little bland for my taste so I generously sprinkled Goya Adobo all purpose seasoning w/ cumin while it was on the cutting board. Perfect! Husband said it was better than chipotle.

Pizza Fondue

The mozzarella cheese never melted - I think it's because it was store bought shredded cheese so the anti-caking stuff they put on cheese may have been the cause.

California Tortilla Pizzas

I made this last night - I didn't have the time or energy to sautee vegetables so I did tomato & cheese tortilla pizzas using my baking stone. I loved how quickly I could turn these out to feed everyone. Like in Diz's review, such a good idea not only for lunch or a light dinner, but snacks too!

Oven-Roasted Asparagus

Loved this - butter, olive oil, sea salt, pepper, garlic and lemon. Didn't add parm cheese (forgot) but delicious! Will probably make this again this week WITH parm!

Chicken Souvlaki with Tzatziki Sauce

I love tzatziki sauce. Soooo good. I added more lemon and oregano to the marinade. Make sure you squeeze the moisture out of the cucumber with paper towels.

Parmesan Artichoke Casserole

I liked this, although I think 8oz of Parm cheese is too much! That being said, it was a very rich and creamy side dish. I added some carrots in for some color. If I make this again it'll be with less cheese

Crab and Cheddar Quiche

Good, although next time I would bake the pie shell first before filling and baking. I used half & half instead of whole milk. 1/4c mayo and 1/4c plain yogurt. Added a sprinkle of cayenne pepper along with the Old Bay. Some finely chopped mushrooms with the parsley. I'll make it again, thanks Shelley!

Salmon Croquette Burgers

I fully expected to not like these. The canned salmon looked unappetizing out of the can... But I was so wrong!!! I made it exactly as written - just the right amount of crunch with the celery, subtle heat from the jalepeno, good seasoning and it held together well during the pan fry. Wow. I'm delighted that a $3.80 can of salmon made these delicious croquettes and came together quickly.

Vidalia Onion Pie

I had a store bought pie crust in the fridge that I needed to use - this seemed like a good way. It was great! Halved the recipe because I had one pie crust - but used 3 eggs. Other than that made it as directed. Delicious with the salmon croquettes from this site!

This was a very hearty lunch! I definitely enjoyed the mayo and mustard (used Grey Poupon) inside the sandwich. Served it with tomato soup - my husband said "mmm, this is comfort food!" A keeper recipe.

Simple Garlic Shrimp

Just simply delicious. Added some fresh chopped tomatoes and mushrooms that I sauteed separately then combined them with the shrimp at the end. The bite of the red pepper flakes took it over the top. Served over linguine. I could eat this 3 times a week...

Easy Chicken Enchiladas

Like others, I added some enchilada sauce on the bottom of the pan and poured the rest over the top of the enchiladas. Used a little less cream cheese and had black beans, no pintos. Everyone loved it and it was easy to make

Pita Pizza

This was SO GOOD! I used olive oil, wheat pitas, jarred Ragu sauce with added oregano and garlic powder. Oh just so easy to make, fast and a crowd pleaser. Although I love to make pizza dough from scratch I hate the mess. Didn't grill but used my pizza stone in the oven. Can't believe I hadn't thought of using pitas before....
