Apple Goat Cheese Bruschetta

I enjoyed this so much I made it two weeks in a row. Great way to use those fresh herbs from the garden. Instead of chopping the apple, I made thin slices to go on top of the bread then spread the goat cheese on the apple slice.

Basic Crepes

Summer Lentil Salad

I liked it but upon tasting it I needed to add some salt. Threw in some diced tomatoes I had on hand. Easy to make and it was a nice side dish to our grilled cheeseburgers this weekend.

Smoked Salmon Pasta Salad

I didn't have cucumber on hand so swapped petite peas. Added some chopped yellow pepper for crunch. Added shredded carrot and chopped tomatoes because they needed to be used up. Two dashes of old bay. Only thing is I would reduce the amount of onion as it can get very, ah, oniony since they're raw

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary

We felt this needed more spice. I used panko breadcrumbs instead of a torn slice of bread but that was the only substitution. If I made these again, I'd add some worcestershire sauce maybe some more garlic

Tuna Noodle Casserole from Scratch

I agree with fellow reviewers that this, as written, is bland. I had to add some salt and diced tomatoes to my bowl, my husband used quite a lot of Tabasco sauce on his plate. I did make it with some cream cheese and added parm cheese to the tuna/veggie mixture. Bottom line is: good base recipe that you need to tweak to your liking! My husband's asked me to make it again and the kid that eats meat liked it.

Very good, my husband said "it's like a vegetarian butter chicken dish". I used some coconut milk, cardamom and cumin as others recommended and served over basmati rice

Refried Bean and Cheese Enchiladas

Great busy weeknight dinner. I had extra from making slow cooker refried beans from this site and used them up on this. I didn't microwave the beans and cheese together first, just poured a thin layer of enchilada sauce in the baking dish, added my rolled flour tortillas with bean/cheese filling, then poured more enchilada sauce and topped with cheese. Loved that I could feed the vegetarian stepdaughter as well as others.

Traditional Indiana Breaded Tenderloin Sandwich

This is like a pork schnitzel on a sandwich and was so delicious to have for a Friday night dinner. I've never had a trad Indiana sandwich but this is good. I toasted the kaiser rolls, double dipped the flattened tenderloin pieces in egg/breadcrumbs and pan fried. Two thumbs up!!!

Grilled Mushroom and Swiss

Followed other reviews and added some chopped garlic to the mushrooms. Had a bag of frozen chopped spinach in the freezer so I took a handful and added to the mushroom/garlic saute. I had monterey jack cheese to use and it melted very nicely. Excellent meatless meal, everyone loved it!

Tomato and Garlic Pasta

Delicious! I added some mushrooms to the garlic, added the peeled tomatoes and let it cook down. Didn't need tomato paste as liquid released by mushrooms/tomatoes and some of the cooking water from the pasta plus the cheese made a nice light sauce. Gave a good sprinkle of cayenne pepper - such a great dinner.

Best Black Beans

Great taste, easy to make, healthy... A winner! I rinsed the beans and added some veg broth. Sauteed the onion and garlic before adding to beans. The cayenne pepper and cilantro are perfect in this

Slow Cooker Carnitas

Very good and versatile. I cut up my pork shoulder into chunks, trimming away big sections of fat (but still leaving plenty of marbled meat) doubled the spices except for the cinnamon - I kept that the same. When it came time to fork shred it was still a little bland for my taste so I generously sprinkled Goya Adobo all purpose seasoning w/ cumin while it was on the cutting board. Perfect! Husband said it was better than chipotle.

Pizza Fondue

The mozzarella cheese never melted - I think it's because it was store bought shredded cheese so the anti-caking stuff they put on cheese may have been the cause.

California Tortilla Pizzas

I made this last night - I didn't have the time or energy to sautee vegetables so I did tomato & cheese tortilla pizzas using my baking stone. I loved how quickly I could turn these out to feed everyone. Like in Diz's review, such a good idea not only for lunch or a light dinner, but snacks too!

Oven-Roasted Asparagus

Loved this - butter, olive oil, sea salt, pepper, garlic and lemon. Didn't add parm cheese (forgot) but delicious! Will probably make this again this week WITH parm!
