About this Cook
I have too many cookbooks and sadly, they don't get read often because I'm always on this site. (the reviews are just invaluable, thanks to everyone who takes the time to do it!) I got inspired to cook by 3 women after I graduated from college (Mom, Stepmother and college boyfriend's mom) I love to make things that taste so good and I know I'm using less oil and butter, salt, etc than any restaurant! I'm a busy home office working mom with a full household. Blended family of three stepchildren and my two children that I bring to the family. Three out of five kids are vegetarian and the other two (plus husband and me)aren't. I usually make at least two things for dinner to feed everyone.
My favorite things to cook
Pasta (fast and easy) but I'm getting tired of it, casseroles because they go over well with some of the kids and make great leftovers. I love Thai, Vietnamese stir fries and Asian-fusion. I love BBQ, cheeseburgers, a well prepared fish fillet and shrimp (love seafood) and always feel better after a tasty salad. I want to incorporate more salad main dishes. In summer my husband loves to grill and I'm happy to let him have at it!
My favorite family cooking traditions
My background is British with very strong French/German influences. I love hot-pots which is a healthy take on fondue: seasoned, herbed broth in a fondue pot that you use asian copper baskets to let everyone cook their preference: beef, pork, fish, shrimp... With lots of dipping sauces. Invariably, people lose a shrimp/scallop or beef/pork medallion from the basket so it's served as a delicious soup afterwards or the next day. It's a very social dinner. I also must have crabs (I'm in MD - so it's the real deal)at least 3 times a summer. Another very social fun thing to enjoy!
My cooking triumphs
Recently using cedar planks to grill salmon that was restaurant quality! I love that! My family is always eager to hear what's for dinner and they look forward to it. (sometimes that's stressful if I'm running behind schedule but if I were a terrible cook they wouldn't be chomping at the bit to hear)
My cooking tragedies
Making a sweet potato casserole for Thanksgiving and the dish slipped out of my hand and splattered all over the carpet in the dining room.

Summer Lentil Salad
I liked it but upon tasting it I needed to add some salt. Threw in some diced tomatoes I had on hand. Easy to make and it was a nice side dish to our grilled cheeseburgers this weekend.

Smoked Salmon Pasta Salad
I didn't have cucumber on hand so swapped petite peas. Added some chopped yellow pepper for crunch. Added shredded carrot and chopped tomatoes because they needed to be used up. Two dashes of old bay. Only thing is I would reduce the amount of onion as it can get very, ah, oniony since they're raw

Turkey Burgers with Brie, Cranberries, and Fresh Rosemary
We felt this needed more spice. I used panko breadcrumbs instead of a torn slice of bread but that was the only substitution. If I made these again, I'd add some worcestershire sauce maybe some more garlic
