Mom's Zucchini Bread

De-Lish! My first time ever even eating zucchini bread - and it turned out great even with my numerous attempts at destroying it (crazy day). I even totally forgot the vanilla after digging around for 15 min to find it - Still tremendously tasty. I can't wait to try it again With the vanilla!

Summer Fresh Pasta with Tomatoes and Prosciutto

Great Summer dinner! This was very light, yet still filling - and SO fresh! I used grape tomatoes (quartered), because I had them on hand - wish they'd been juicier - I will go with regular tomatoes (per your instructions) next time. Thanks, Wyattdogster - this is a keeper!

Chicken As You Like It

This was Fabulous!!! I did increase the amount of sauce as others suggested, specifically: (my bird was over 5lbs.) I used 1 1/2c Italian dressing, 2 pkgs Onion soup mix and 1 teaspoon Oregano. Baked 45 min. Then I topped with 8oz fresh mushrooms, sliced, and about a cup of cherry tomatoes, halved, and baked another 30-40 minutes. The house smelled amazing and everyone cleaned their plates! The sauce was delicious over creamy mashed potatoes. This one's a keeper for sure!

Cream Cheese Mashed Potatoes

These were delicious! I have to admit, I had not read all the way through the recipe to the "bake 1 1/2 hours", and it was way too late to do that - so we just whipped them up & ate them straight away. We will definitely make them again - and maybe bake them, maybe not (but probably not for an hour and a half, that seems pretty long).

No Ordinary Meatloaf

Very moist & tender, nice flavor. After mixing this up, I really expected it tp be very "bready"- It wasn't! I did replace the green pepper with green chillies, and replaced the ground pork with venison because I had it on hand. I also free-formed the loaf & cooked on a foil-lined baking sheet. Nice recipe - Thanks, MadMoMi!

Grilled Corn and Poblano Salad with Chipotle Vinaigrette

Wonderful! I had to sub an Anaheim Chili for the Poblano as that's all I could find. Followed the recipe to a "T" otherwise - A delicious accompaniment to our boiled shrimp & crab cakes!

Alabama Pulled Pig

Wonderful pulled pork! This was our first time smoking a butt (actually 2 - each was 3.5lbs). Smoked at 200-250 until meat reached 160 degrees. Then wrapped in foil with the additional liquid and baked about 3 hours. When it was ready to pull I just added the liquid from the foil then covered and returned to oven at 250 until we were ready to eat. The pan was completely cleaned out! Thanks, Robert - we will definitely be making this again!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Fabulous! I tripled the sauce as we had a LOT of ribs. It took 2hrs or so to reduce then blended it once cool to chop up the onions. Also I accidentally grabbed two racks of St. Louis style ribs along with the baby backs and they worked out just fine cooking for the same amount of time. This is definitely a keeper!

Fresh Strawberry Upside Down Cake

Yummy in my Tummy!!! This was super easy and everyone loved it! I used fresh strawberries (sliced w/added sugar). I'm not a fan of marshmallows and wondered how they would affect the end product, but went ahead & followed the recipe. Couldn't even tell they were there! Which was fine, It tasted delicious! I made mine in a bundt pan and baked for right at 50 minutes. When I poured the cake batter in, it was right up to the edge of the pan and I thought it would probably bake over (so added a cookie sheet underneath). To my surprise it didn't overflow at all! Once the strawberries & marshmallows cooked down, it was all fine. Also, I don't have much of a sweet tooth, but I've had three pieces of this cake so far. Like I said, Yummy in my Tummy!

Cucumber Melon Salsa

We thought this was Fabulous! Served it over a spicy-grilled white fish and it was the perfect accompaniment. Word to the wise - this makes A LOT! So unless you're feeding a crowd, consider halving the recipe.

Three-Meat Stromboli

Delicious! I added roasted red pepper to two of them, which was nice. Also I accidentally used a parm/romano blend and I think it may have actually enhanced the flavor. This one will definitely stay in my recipe box for future gatherings!

Southwest Chicken Quesadillas

These were good. I used "Marinated Fajita Chicken" which I had cooked for recipe group. Like others, I also cooked mine in a skillet and also, like others, had difficulty flipping them. I think the better route would be to use larger tortillas & put the filling on only half whether cooking them in the oven or stovetop. Oh, and I left out the salt, only because I forgot, but they didn't seem to need it after the fact anyway.

Marinated Fajita Chicken

I made this for Recipe Group. It was quite good - I did reduce the lime juice to 1/2 of what was called for, but other than that followed the recipe and chopped, rather than shredded the final product. I used this chicken to make "Southwest Chicken Quesadillas" also from AR.

Love these! I used the 9.75oz Cheetos and 20oz. Almond bark. Once spread into the pan & cooled, I tried to cut them into squares - well, for my batch, I'd say "square" was a rather loose translation, LOL. No matter. They are without a doubt the most fun thing to make & share that I've yet to discover. Brought them to work and everyone is intrigued to try them (expecting something strawberry), then we all giggle as we continue shoving them into our mouths. Thanks for a fantastic surprise, Caroline!

Italian Chicken Sausage Risotto

We really weren't blown away with this. It was OK, but won't make our regular rotation. Like others, it was my first time making risotto and I was intimidated, but followed the recipe (except for timing - mine took about 45 minutes) and the consistency was right on. We definitely liked the Al Fresco sausages and will use them again, just not for this recipe. - Oh, and there's no mention of Parmesan or Parsley in the ingredient list, so don't forget them when you make your grocery list.
