Classic Smoked Sausage Mac and Cheese

Sort of a lot of work. It was good, but not something I'd make again. I added broccoli to make it a complete one-dish meal. I wish there had been more sausage, and that the sausage itself had more flavor. The mac & cheese were good, though a little Too Cheesy-Creamy (if that's possible). The sausage, and even my broccoli, were too lost in the mac.

Grilled Steak and Fresh Mozzarella Flatbread

I was pleasantly surprised by this recipe. I did add more seasoning to my steak (as I usually do) and I added a good sprinkle of salt & freshly ground pepper. It actually made for a tasty, light dinner with almost no effort.

Confetti Beef Taco Salad

Yum! Who knew you could improve on a taco salad simply by changing the way you put it together? I thought mixing the chips/cheese/tomato with the beef sounded odd (I don't know why, that's what you do after it's on your plate anyway, right?), but it really worked! I used my own taco seasoning & made a dressing of Ranch mixed with taco sauce. The only thing to consider is if you aren't going to eat the whole batch in one sitting, be sure to keep your meat, chips, tomato, etc. separate & combine for just as many servings as you're having right then.

JELL-O Patriotic Mini Fruit Tarts

We really enjoyed these! BUT... I used a biscuit cutter to cut circles out of the pie crust (I got 20 out of 1 crust) and then pressed them into the mini-muffin pan. I do think that had I cut them in wedges (and then had 24 out of 2 crusts) that the crust would have been too heavy for our liking. The kids really enjoyed filling and decorating the tarts. This is a keeper!

HERDEZ® Turkey and Zucchini Enchiladas with Tomatillo Verde Sauce

Quite tasty! My only complaint was not knowing for sure what size tortillas to use. I had 6" and it made 18 enchiladas with still a little extra filling to go. Much spicier than I had expected, but we loved that!

Beef and Broccoli Stir-Fry from Birds Eye®

This was OK. Not bad, but nothing to write home about. I used seasoned, pre-cooked chicken along with 1/2lb of sirloin. The chicken and broccoli were the best parts. The steak definitely needed more flavor and some of the other veggies were a bit limp for our liking.

Mushroom Smothered Steak

This turned out better than I expected. I used red wine vinegar. I did season the steaks well before cooking & added quite a bit of salt & pepper to the sauce. We did not have any issue with the texture of the mushrooms. I still felt like it needed something, just not sure what. If we make this again, I will probably grill the steaks & possibly add a little "browning & seasoning sauce" to the mushroom mixture.

Yummy Grilled Asparagus

Fantastic! I think I was concerned it would just taste like asparagus with Italian dressing, but it didn't at all! Is it the magic of the grill or the lemon pepper? Who cares?! It's delicious!

Grilled Marinated Salmon

Very good recipe. I used this marinade & wrapped my salmon in cedar paper which I'd soaked in bourbon. I think, personally, I'd prefer a little more of a glaze - maybe adding some maple syrup or teriyaki sauce next time.

Grilled Feta Tomatoes

Yum! I expected the feta to be overpowering, but it really wasn't. I had plain feta, so I mixed in garlic, basil & oregano. I also salted & peppered the inside of the tomato before adding the filling and topped it off with a little grated parmesan. Hubby wants to put these in the regular rotation!

Chocolate Butterfinger-Caramel Cake

We LOVED this! I split the recipe between 2 square casserole dishes for two separate family events. I used Cool Whip instead of whipped cream. Even better when my brother-in-law showed up with homemade butterfinger ice cream!

Light Delight Sauza®-Rita

This margarita was WAY too sweet for our tastes. I made simple syrup using Splenda Granulated (1:1 ratio with water) which could possibly have made a difference. This was the first time I really appreciated the salt on the rim of the glass. It should be noted also that the ingredient list just says simple syrup, but the directions note sugar-free simple syrup, and I don't know that sugar-free is readily available for purchase, meaning you would have to make your own.

Bowties with Italian Sausage in a Cream Basil Sauce

De-lish! I used Half & Half for the cream and a can of diced tomatoes, drained. Also, I didn't have quite enough fresh basil, so I also added a little dried - believe me when I say I'm no fresh vs. dried herb snob, but the Fresh Basil really made the difference. I will definitely make this again. I really love the "light" consistency of the sauce with the tomato & basil. Thanks, Johnsonville Kitchens!

Chiliville Chili

Very tasty! I mis-read the ingredients before going to the store, so I had to improvise on the tomatoes - used 1 (14.5oz) can of diced tomatoes with onion, celery & bell pepper along with 3 (10oz) cans of diced tomatoes with green chilis - but I really doubt that made much of a difference. I used the Johnsonville Hot Italian Sausage and I did simmer for a longer time (probably an hour), but only because we were't ready to eat. Everyone really loved this chili!

Sugar Snap Peas

Very good & super easy. I used finely diced onion & a clove of minced garlic in place of the shallot and about 1/4t dried sage (not the powder). I'm not really even a fan of snap peas, but will definitely make these again.

Glazed Meatloaf II

Delicious! I subbed 1 pkg (19oz) Johnsonville (R) Hot Italian Sausage for 1lb of the ground beef and baked in a muffin tin @ 375 for 30 min. Very moist & the sausage really added a nice depth of flavor. This recipe's a real keeper!
