Fluffy Pancakes

We LOVE this recipe!!!! Thank you for posting this!!! I will NEVER buy a box mix again!!!! Always a crowd pleaser!!! ***I like my batter a little thinner so I add a little extra milk*** Flavor tweak: I also add 1/2 tsp of cinnamon to the batter for another layer of flavor!!! Family loves this!!!

Irish Cream Chocolate Cheesecake

I've made this a few times now and I always get so many compliments on how good the cheesecake looks and tastes!!! I like to use the dark chocolate wafer cookies for the crust but resorted to using two Oreo readymade crusts. I simply crushed them and pressed them to the bottom of my springform pan.I didn't add any other ingredients for the crust. Used 1/2 cup Irish cream and instead of doing a water bath, I put a pan of water on the shelf beneath the cheesecake! No cracks! The trick is to let the cake cool in the oven for a few hours (no peeking in!) The slower it cools, the less chance for cracks plus the sides will not stick either!

Banana Crumb Muffins

Just made these and they are great! I did add a tsp. of vanilla to the batter as well as a 1/2tsp of cinnamon. Tried one batch adding the topping during the last 5 min.and had minimal success.2nd batch I added the topping before baking with great success! Thanks for sharing!

Fruity Curry Chicken Salad

I made this recipe for a ladies luncheon and it was a huge hit!!! I made it a day ahead of time to allow the flavors to come through and blend and it worked out so well! One thing I did was to shred the chicken breasts rather than dice them. I prefer this texture rather than having little cubes of meat. I also left out the golden raisins. I added a few more grapes instead. Next time I might try some dried cranberries instead. Thanks for sharing this!!!!

Sturdy Whipped Cream Frosting

This is a GREAT recipe***Helpful Hints**** Use cold cream cheese right from the fridge. Soften cold cream cheese along with sugar and extract in the mixer first before adding the heavy whipping cream. Slowly add the heavy whipping cream and stop mixer frequently to scrape the sides and bottom of the bowl to incorporate the ingredients. Pay attention to the consistency. Keep mixing until the frosting does not drip off of the mixer whisk. Just be careful to not over mix and turn it into butter! Hope this helps!

Peanut Butter Bars I

I made this recipe only once before and gave it four stars because I had to chisel it out of my glass dish. It tasted good but the presentation was lacking due to me having to hack at it. ***However, this time I gave it five stars because I only made half the recipe and instead of using a glass dish, I used a cookie sheet lined with my Silpat mat! Once the pan chilled, I lifted the whole piece right out and placed it directly on my cutting board! Great presentation and excellent taste! Will make again and probably again and I'm sure again after that! ;-)

Quick and Easy Pizza Crust

Very good recipe! Easy to make, tastes very good, kids liked it! I didn't even have to roll it out, just shaped with my hands and put it on a baking sheet lined with a Silpat mat and cornmeal. ***Remove Silpat mat prior to cutting pizza or you'll end up ruining your mat and your pizza!*** Will make this again!!! Thanks!!!!

Split Pea and Ham Soup I

I liked the recipe. I used it as a base but made a few tweaks to it. I cooked the peas using two cans of low sodium chicken broth and three cups of water. I also added a teaspoon of minced garlic when I sauteed the onions in olive oil rather than the vegetable oil. I also used a boneless ham steak instead of a ham bone. I served it with a side of cheese toast and it complimented the soup nicely!!! Thanks for sharing!

Banana Banana Bread

I used this recipe to make 12-13 cupcakes. I baked at 325 for 25 min. and they turned out great! A nice, simple muffin recipe! Next time I think I will make a crumble topping to add a little more flair and maybe mix in a few walnuts. Overall a nice tasting, simple muffin.

I thought this was very good! Per the reviews, I added some onion, garlic powder and worchestershire sauce. I tried it with the toast and it was tasty but then I put some over some pasta shells and it was more my speed! :-)

Mall Pretzels

I made this recipe three times over the holidays and it was a big hit each time! I followed the instructions to boil with baking soda until the pretzels float. This only took a few seconds. I baked them and sprinkled with the kosher salt. I served them with some garlic butter and they went really fast!

Caramel Popcorn

I made this again and still give it five stars! This time I used foil roasting pans as others have suggested and they worked great! It saved time on the clean up and actually I delivered the popcorn in the same foil pan.

Florentine Artichoke Dip

I found this recipe a few years ago here and I've been making it ever since! It is the perfect appetizer! I make it a night or two before an event and then just bake it on the day I need to serve it. I usually add more garlic because that is the way we like it. I get tons of compliments when I make this dish! Enjoy!!!

Downeast Maine Pumpkin Bread

This is a fall staple in our house! I modify the recipe a bit by cutting the sugar to 1/2 cup, 1/2 cup oil and adding a 1/2 cup of applesauce. I also add 2/3 bag of mini chocolate chips. I bake it in paper lined muffin cups for 18-20 min. One recipe makes about 24 med. sized muffins. Cream cheese frosting is a nice touch but not necessary. Enjoy! :-)
