Taco Seasoning I

Reviewed: Aug. 16, 2010
This is very good! I didn't use onion powder (none on hand), and added a little flour for thickening purposes. It really needs a thickening agent of some sort, so add a teaspoon or two flour (otherwise, you'll get watery tacos). Will be making again and again!

Kielbasa Apple Kabobs

Reviewed: Jul. 10, 2010
A change from the usual kabob! I added chunks of onion to the mix because we like them, and we were not disappointed. The glaze caramelizes a little on the grill, and makes it taste all the better.

Cool Cucumber Salsa

Reviewed: May 29, 2008
Very good. I decided to add a "sweet" note to the salsa, and added frozen corn (thawed). I also used red onion, as that is what I had on hand. This is a versatile recipe, and a great starting point.

Peppy's Pita Bread

Reviewed: May 24, 2008
Per another reviewer's advice, I used half AP flour, half whole wheat flour. YUM! Great texture and mild taste. (5 stars for recipe WITH substitution)

Homemade Peanut Butter Cups

Reviewed: Mar. 2, 2008
These were pretty good. To me, something about the peanut butter centers wasn't quite right. Perhaps too much powdered sugar? I used a good dark chocolate candy coating instead of the milk chocolate + shortening, and I think this was an easy substitution which worked great. Going to have to tweak them a little to get them just right!

Parmesan Fondue

Reviewed: Feb. 16, 2008
This was pretty good. It had a little too much of a cream cheese twang to it, but I think I'm going to tweak a little next time to make the Parmesan flavor stand out more. Thanks for sharing!

Chicken Pot Pie II

Reviewed: Jan. 30, 2008
This was pretty good! I made a pie crust recipe for 2 9" shells so I could line the top and bottom of the dish. Looking at the amount of ingredients as I was preparing it, I was glad I chose a 2 qt. dish instead of a 1.5 qt, as it made more than 1.5 qt! I also had to bake it about 35 min., probably because of the larger dish & extra crust. Will make again with these modifications.

Unbelievable Spinach Calzones

Reviewed: Nov. 27, 2007
These were pretty good. I halved the filling and used 1 thawed loaf of frozen white bread dough (make sure it is room temperature, so it's easy to work with). I only used about 0.5 tsp of Italian seasoning (could have omitted it totally), and added some garlic powder. It was just perfect to make 4 calzones. We thought the balance of spinach/cheese was just right. Made great leftovers, too!

Big Soft Ginger Cookies

Reviewed: Nov. 27, 2007
These were pretty good! Husband thought they tasted like pumpkin cookies, but I believe it's just the combination of spices he was tasting :-) Cookies stayed moist and soft for days.

Turkey Bow Tie Skillet

Reviewed: Sep. 22, 2007
This was nothing special. It seemed like it needed a little something extra, but I'm not sure exactly what that would be. Sorry, but not a keeper here :-(

This was just okay... Something wasn't quite right about the flavors. Probably won't make it again.

Ultimate Double Chocolate Cookies

Reviewed: Sep. 15, 2007
Very good! My husband requested something "really chocolaty", so I made these cookies. They really hit the spot. The few we had left had dried out a little after a day, however. Thank you!!

Spicy Green Bean Saute

Reviewed: Apr. 2, 2007
I modified this recipe slightly, so take my review with a grain of salt, but I think it turned out pretty well! I left out the red pepper and onion (didn't have red pepper and wasn't in the mood for onion) I used 1/2 C. chicken broth, 1.5 tsp cornstarch, 3 TB teriyaki sauce, 1/8 tsp cayenne, 1 clove of garlic (minced), 1/8 tsp ground ginger and about 1.5 cups of fresh green beans (trimmed & cut). I finished it with a garnish of black & natural sesame seeds. There was plenty of extra sauce... could have used .5 to 1 cup more green beans. This was recipe was plenty for one as a main dish, and would be a great side for two. Very good!!

General Tsao's Chicken

Reviewed: Mar. 27, 2007
I didn't have fresh ginger, so I substituted ground (I would recommend using less than 1 tsp. ground). I also only used 3T cornstarch for the sauce, but I would cut that down as well, as the sauce was too thick for my taste. We like lots of sauce here, so I made a full recipe of the sauce and a half of the chicken... not too bad! I'll probably make it again, but with lots of tweaks.

Chewy Brownie Cookies

These cookies were pretty good! I only used 1 cup of chocolate chips and left out the nuts (personal preference). Fiancé thought they needed caramel chips, but I was pretty pleased. Thank you!

Country Cinnamon Swirl Bread

Reviewed: Jan. 26, 2007
This is probably my new favorite cinnamon quick bread! It had a light texture and reminded me more of a coffee cake than your usual dense quick bread. I will definitely be making this again :-) Thank you!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 29, 2006
This recipe is great! I use regular shortening and omit the raisins (personal preference!) and they are so chewy and tasty! I love the subtle spiciness of these cookies with a cup of mulled tea on a cold day :-)
